Making Condensed Milk

Several festive recipes call for a can of sweetened condensed milk.  I have seen a recipe on the Simple Savings site for Condensed Milk made in the saucepan, and wonder if anyone's made it in the Thermomix?  I've made dulce de leche (caramel) but to go a step back, do I just cook for a shorter time?  I've searched the forums to no avail...

Here's some recipes -
Dulce de Leche (from Bron's recipe)
1 litre milk
250g organic raw sugar
200g cream
1/2 teaspoon bicarb

Place all in TMX and program 40 mins, Temp Varoma Speed 4. Place basket on lid to allow it to evaporate without spitting.

When finished, quickly pour into jar and leave it to cool. When it cools it will be nice and thick. Keep in the fridge.

Condensed Milk #1 recipe (Hillbilly Housewife recipe)
250ml water
370g sugar
200g milk powder
6 tbsp melted butter (or less)

Place all ingredients in the blender and let it blend for a full two minutes. Thickens further in fridge.
*Extra hint: Use hot water and dissolve the sugar before adding the other ingredients.

Keep it refrigerated. Makes the equivalent to two tins and can be used in any recipe that calls for it.

Condensed Milk #2 recipe (Destitute Gourmet recipe)
3/4 cup sugar
1/2 cup warm water
1 heaped cup of full fat milk powder

Dissolve sugar in water then whisk in milk powder , simmer gently, stirring constantly for about 5 mins. Makes about 1 cup or 1 can's worth of condensed milk.

Apparently it's fine with soy and goat's milk powders, and also with rice flour.  I want to use our full cream raw cow's milk from our house cow.  I guess I'll need to add powdered milk to thicken it?

Think I'd give it a go just cooking less than Dulce de leche without adding milk powder to start.  Should work - just add smaller amount of sugar to start.  You can add more if it isn't sweet enough when thickened.

I remembered that I had a TMX recipe for condensed milk which I found for a friend, but unfortunately I haven't noted which website I took it from, to be able to credit it  :(  Here it is anyway, and apologies to whoever originally wrote it that I haven't credited you.

Condensed Milk in Thermomix

Ingredients
100g water
220g powdered milk
80g sugar.

Method
Blitz the sugar for a 8 seconds on speed 9. Then add water.
Cook 5 minutes at 80 degrees on speed 1 until sugar dissolves.
Add the powdered milk and cook another 3 minutes at 50 degrees on speed 4.


Hopefully, though, someone will come up with a recipe which doesn't need powdered milk.  I have a bit of a thing about powdered milk for some reason.

I don't really want to use powdered milk either.  The cow's supplying heaps right now, so maybe I just need to experiment with the dulce de leche recipe, and for a shorter time.  I wonder what the bicarb does?

Thanks again!  Now, if I could get to my Thermomix (teenage daughters cooking, cooking, cooking) I'd give it a go today! :p

It would probably pay to put it in for the first batch.  It will help neutarlise acidity.

I decided that I wasn't going to be beaten by this  ;D

I've done a fair bit of Googling, and have finally come up with this from http://www.astray.com/recipes/?show=How%20to%20make%20your%20own%20sweetened%20condensed%20milk:



Yield  4 cups

Measure   Ingredient
6 cups    Whole milk
4½ cup    Sugar
½     Vanilla bean


Judging from the original instructions, you'd put it all in together, speed 4 / 90oC / 60 mins  with MC removed and internal steamer basket placed on top instead.

Alternatively, you could try mixing the Dulce de Leche idea with this, and add the bicarbonate to stop it splitting, then use Varoma temp for an initial 20 mins and estimate from there whether / how much longer is needed.

Hope this helps.  Let me know which recipe you used in the end, and how you got on.  I'm really interested now  :D

The bicarb promotes browning in the cajeta or dulce de leche.

Ooooh...thanks Caroline. Will try that last recipe you posted.  It will be nice to have SCM not made by Nestle!

Okay, so I have had Dulce de Leche fail 2 days in a row.  Within 10 mins it has overflowed and spilled all over TMX and the bench (and the first day, the floor and a shelf and stuff - till I moved tmx).  Anyway, I saved what was left in TMX bowl and it tastes like condensed milk, but isn't thick.  Immi (DD 13 yrs) is going to try it in the ice cream recipe with condensed milk, cream, etc.

Possibly it is getting too hot.   The "trick" to dulce de leche is slow cooking at a low temperature. 

I make dulce de leche in a crockpot and it is a cinch and needs little attention.   I got my recipe from a neighbor who is from Mexico (Durango) and mine is made partly with goat milk - which is the authentic base.

I've tried it on the stovetop and in the oven but both times had boil-over problems.  Fortunately the pan in the oven was inside a larger pan but the stovetop was a mess.  Fortunately mine is fairly easy to clean.

I think as long as the milk is moving fast enough the bubbling over should possibly be avoided?

Can anyone tell me why milk doesn't boil over when you put one of those flat glass gizmos in the base?    My mum used to use it in her pots when boiling milk.

So, it may be that you need faster speed fora while, or put the spatula in at an angle so some steam gets out while the top keeps getting broken to prevent the foamy layer?

OK - still more - the picture http://en.wikipedia.org/wiki/File:Solidex_Package_Back.JPG shows that you can use it for sooking pasta - I never knew that !!!!

Also mam_bel - if you have a small fan, then you could aim it into the hole in the lid to prevent the boil over

When I make DDL in the TMX I cook on 90 or 100 until it gets quite reduced then go up to varoma temperature once it doesn't boil over any more.
