Wanted to make something really quickly tonight having decided at the last minute to go to a meeting.  Completely out of butter and a few other things, but had enough to make these:  a mixture of the cheddar and parmesan, didn't have any bacon but had chorizo; and a mixture of zucchini and carrot.  Baked 24 mini muffins and took those to the meeting (all gone) and the rest went into a rectangular pan - and I'll take some of that to work  tomorrow for lunch . . .

They look yummy BZB.
They go down a treat here with the little kids who love them in their lunch boxes or as a snack.
It's such a versatile recipe as you can put in whatever you have at the time.  :)

They are very nice. I think I may make so e to take away for lunches for a couple of days.
May all dairy items in your fridge be of questionable vintage.

Experiment making some takoyakis with this. It takes longer to make but yummy. attached is photo of normal one, takoyaki and takoyaki in process.

Hi Bonsai, there is takoyaki recipe in vegetarian section. I just experimenting using this recipe as takoyaki.

I would keep them in the fridge BZB or do you mean make them the night before, refrigerate them then take them to school for the end of year festivities and perhaps not be able to be refrigerated?  I'd pack them in an esky or in a freezer bag with those solid ice blocks.

I've successfully kept them in the fridge for a few days. They are actually muffins, not quiches  (quiches don't have flour in the mix) but taste good just the same. They really need the bacon, a bit bland if you don't use it.
