Think I'll make these again on the weekend. And I have some slices of corned beef in the freezer, great idea!

Made a batch of these tonight for my DH to take into work tomorrow for their morning tea.  Used gluten free flour as a couple of people at his work are GF.  It changed the texture slightly, but they still tast great  :D

Not so much the kids except my ds.. But the parents.. They were competing with cupcakes which is why they definately lost.. They are delish though.. Definately thumbs up!!

No time like the present.... I happened to have the ingredients for these so decided to make them for dinner tonight.  I only made a 1/2 batch and put the entire mixture into a slice tray rather than make individual muffins. 

Now I know why these are a favourite with forum members.  Really nice Amy and so quick and easy to make.

I made these today and here is the verdict from my 3 boys (all with very different tastes and can be a little bit fussy at times). I made in a large muffin tin and the mixture made 20.

DS8 Yummm ! and ate 4
DS6 The fussiest of all and doesn't like quiche. Ate one saying he didn't like them with a big grin on his face saying I don't like quiche ! and then proceeded to eat 2 ! Quite good for my fusspot !
DS4 not feeling the best today and has a sore mouth, at 1 (not too bad after a big bowl of yoghurt.

I had 3 and loved them. 

AND the best news of all ........................ no mess from my 3 little messy eaters ! so that saved me sweeping the floor !!
