I suggest to my guests at demos that a jam funnel is a useful addition as is the use of cling wrap over the bowl when milling sugar, spices and other dry goods that tend to 'escape'.

Hi, I got this book for Christmas and have spent a lot of happy hours so far reading and looking at the recipes. I think it is an excellent book and I am looking forward to making my own takes on the recipes in the next few weeks.
The photography is excellent, no thats not fair it a more than excellent, its so inviting that you can almost smell the food on the pages (or is it really scratch and sniff printing?)
Three things which annoy me about most cook books, why matt finish (as others have said) it gets so tatty so quickly and why no book ribbons/markers and why are the page numbers so small?

OK HO have agreed to replace the blade unit. When the unit is not in the TM and you rotate it by hand it can be heard squeaking. This does certainly suggest a bearing issue.

Anyone solved this one I have had my TM since May and now it squeaks on speed 2/3 as described by others.
When something squeaks  it means there is a problem.  On other machines it suggests a bearing or lubrication issue.
I am going to contact HO tomorrow.

The current issue of the BBC Good Food Magazine has a 'free' silicone spatular which is ideal for cleaning the TM bowl. The magazine is excellent too!

Excellent uses from everyone!  I have been smoking cheeses recently and then I vac pack them to mature, works a treat. I have also found that vac packing marinades increases the flavour in the product as others have found.
Curries, casseroles, stews, bulk buys all sealed.  I sealed a have white cabbage the other week and I am seeing how long it will last, I will keep you posted.
Currently looking for bulk buying of the bags/tubes because the cost of small packs is silly.

I have been an avid user of a simple vacuum sealer for many years, I have even developed a way of using a balloon pump to enable me to extract the air from standard bags prior to tape sealing them. However I have just treated myself to a 'posh' seal-a-meal machine which is excellent for standard sealing but can also be used for creating your own ready meal type boil/heat in the bag but with the advantage of home cooked food!
Does anyone else have any hints, tips or experience of this type of equipment?  Love to hear from anyone about this.

I have not got an excalibur but I do have a dehydrator which I use quite frequently for herbs, fruit, mushrooms, ginger etc.
Great to use really useful. Would suggest that you look at one of the many books available on drying food before spending shed loads of money on this though.

Personally I don't like coated pans (non stick) because eventually it does come off or wear through. I prefer stainless steel dual layered pans with full metal handles, ie nothing that can come off, get chipped or damaged in anyway. High quality stainless is easy to clean even if you inadvertently burn food on the pan.
I am a big fan of James Martins Stellar pan range, would never buy a set as a set because rarely is every one there that you need. Buy individually and buy what you will use rather than what is given in  a set.
Buy the best quality that you can afford and it will reap great rewards for you and your cooking.

Ok folks still working on this an have found the perfect accompaniment to the TN when camping!  Yes its a Cobb BBQ system, beautifully styled and technologically sound just like the TM but it will enable you bake, make pizza and do all the things that you do in the oven when you have been using your TM at home.
For those who are going to respond about weight, size etc. Taking the TM camping is easy and not an issue except if you go back packing in which case you probably wont want to carry the TM or a Cobb but for us car based campers who do not tow a caravan and therefore don't have an oven this is an excellent coast effective solution.
I will keep you posted how we get on with this during the summer as we head off on our holidays.

Introduce Yourself / Converted owner!

Hi I am pleased to say that at long last I have been converted!  Yes I am upgrading from a very old TM3300 which has done sterling service over the years to a new TM31! It was ordered today and should arrive tomorrow, hold the front page, I can't wait.!!!!
But what should be the first thing we should cook in our new TM31? ??? ???
