Malt Biscuits
I made these between baking 2 loaves of bread. They are quick, easy and tasty. The recipe was on a scrap of paper that was torn out of the Age several years ago. It has Gail Thomas's name on it.
125g. butter
90g. raw sugar, and extra for topping.
1 Tablespoon malt extract, liquid.
1Tablespoon condensed milk.
1 cup S.R. flour
90g of sultanas if you wish. (I left these out as I wanted a very plain biscuit )
Set oven for 180c, FF
Place raw sugar in bowl of TMX and zap to make like caster sugar.
Add softened butter, and cream 4 mins. on speed 3, scrape down bowl.
Add milk and malt and mix, speed 3 , 2 mins.
Tip in flour and on REVERSE mix for 30 seconds.
Using a small ice-cream scoop,(2 1/2cm.) or a teaspoon, place small mounds on to lined baking trays. (makes 28)
With a glass with a flat base dip base into extra sugar and lightly press on to each biscuit.
Bake for 15 mins. Cool on tray for 5 mins and then on wire rack.
If you subbed honey for the malt you would have honey snaps.

Molly - Whipped up' a batch and they're a hit!!! I just crushed a malt biscuit over my French Vanilla Sara Lee ice-cream... then mixed it in. Oh, Yummy. Failsafe and delish!!
willmac - Achookwoman, I took your advice and just made these using honey, all I can say is the kids have eaten so many already, so I would say this was a success, great idea.
Hestonfan - The biscuits were delish- I made a few substitutions due to lack of exact ingredients in my larder and they were great!
I used 2 Tbsp of Ovaltine. Instead of condensed milk I used 1/2 cup whole fat dried milk powder, to make up for the lack of liquid I used 1 Tbsp maple syrup and 1 Tbsp water. Half of the batch has been demolished already! Thank you for this recipe.
faffa70 - Well Chookie, inspired by hestonfan and with Bron's words of "never let not having an ingredient stop you from making a recipe" ringing in my ears, I searched my cupboards and came up with a tin of Malted Milk Powder!!! So two heaping tablespoons of MMP mixed with 1 tablespoon of hot water and I had (sort of lol) a malt syrup. Made the biscuits up and they are a hit (though passable on the malt flavour - definitely malty but they would like it more so). Thank you all.
Denzelmum - Turned out nice. Mine were not very consistent with the thickness but the thicker one taste nicer.
Chookie - I use a small ice-cream scoop for all my biscuits and they are pretty consistent. They therefore all cook in the same time, although I do turn them around half way through.
-
oh lovely chookie. looks like a nice crunchy biccy ;D
-
Oh, and suitable for those on Failsafe diet. yay!!
-
Great recipe Chookie. Now we can even make the biscuits to go into that Christmas recipe for crushed mints, malt biscuits and condensed milk. You'd know that one, has been around for ever.
-
CP 63, these are so simple and really nice and crunchy. Made these for the grand children but DH said that the BIG children liked them.
Molly glad they a "Failsafe" because they are really nice. They are the sort of base that you sould add to. Good luck.
-
'Whipped up' a batch and they're a hit!!!
Hmmmm.... now what to do with the rest of the condensed milk sitting the fridge.... calling my name.
-
Molly, I freeze the left overs. Glad you liked them ;D

Check out the icre-cream section - there are lots that have condensed milk in them. Is there a failsafe flavoured ice-cream?
-
I just make plain vanilla icecream, milk, cream, sugar and vanilla. Or else I use yogurt.
-
Another use for the malt. :-*
-
I found some malt extract down at Coles near my DD this morning, my Foodland didn't have any.
-
Loved these biscuits, DH loves anything malt! :)
-
Made another batch today and it struck me that id you sub'ed honey for the malt you would have honey snaps. ;D ;D ;D

willmac, thanks for the feedback, will try this next. Glad the kids liked them 'cause they are so easy.
-
Yum. Wish I had enough time to make even 10 % of the recipes I have cut from papers & pasted into folders :-\
I have a box full of recipes that I thought - gee that would be good to make ..... one day
-
Nah Thermomixer, you are going to run out of time unfortunately ;) ;) :-* :-* :'( :'(
-
I know that you are right, but I can't help myself :-)) :-)) Just cut something out of a mag that MrsT was throwing out - when will it end?

I can't buy malt extract in my stupidmarkets here any longer :( :( :(
I wanted to make these on the weekend and tried to buy it today.

I'm the same Thermomixer. Sat in an ophthalmologist's waiting room for 1.5 hours this week and wrote out 11 recipes from 2 magazines. I am a recipe tragic too. I don't think my kids will be surprised when they clean out the house & find so many recipes.
-
The recipe for the Malt Biscuits came from one of those slips of paper, Judy and Thermomixer. :-)) :-)) :-))
faffa 70. You could try Golden Syrup or Maple Syrup. I friend has asked if I could turn them into a lemon biscuit. Next project ;D
-
I found malt extract in Coles (2 brands in different places) and ended up choosing Pure Harvest organic Rice Malt Syrup because it was a 500g sized jar and therefore much cheaper than the l kg tin of barley malt extract. This should last me a considerable amount of time. I'm hoping it will do the job in the couple of recipes on here using malt syrup.
-
My local Coles has just been revamped and they have removed a lot of items from the shelves (not that they weren't before that!!) I had seen both of them there before (I think one was Saunders in a malty coloured tin) Might see if I can get some Rice Malt Syrup from the health shop :)
Chookie the family want the MALT - they (were when I used to occasionally buy biscuits) a family favourite ;) ;)
-
Judy , I use the malt in some of the grain breads.
-
Instead of anything Chookie or in addition to? How much would you use?
-
Judy, usually about 1 Tablespoon to a loaf made with 500g of flour, ( or 500g combo of seeds and flour).
-
Kathryn I had the same problem as you. I went to 2 Coles shops and they didn't have any so then dried the local health food shop and they didn't either. I may end up trying treacle or something similar. I like the taste of malt though.
-
Cookie and Kathryn, maybe a beer supplies shop may have some. The last lot I bought was a 'Simply No Knead" product. I bought it from a Gourmet food shop. It is cheaper in the Health food stores.
-
What about substituting malt extract with Ovaltine?Just checked and it's made of 40 pc of barley and malt extract and only 8pc of cocoa.
Will try these after dinner :-*

ha ha Chookie I just had that idea this afternoon and was coming here to post it - see great minds and all that :D :D
-
Good idea, except the malt is liquid so will need to make Ovaltine liquid, Hestonfan.
-

H ;D ;Destonfan, I just love what you have done to the original malt biscuit recipe. Looks like the basic recipe can be adapted to whatever we have in the pantry.

Good try Faffa70. What would happen if you mixed MMP with maple syrup?
-
Well Chookie I am sure I will be able to tell you by the end of the week with it being school holidays and all lol - will try that with the next batch of biscuits I make ;)
-
Let us know how you go. I am going to try a lemon version next.
-
