Name of Recipe:Dried Mushroom Soup
Number of People: 4 serves
Ingredients:
30g dried mushrooms - I used a mixture of 3 types - common mushrooms, shitake & black fungus.
750mls boiling water
1 good tblspn vegetable stock concentrate
1 tblspns dried onions - I used the fried, dried onions from an Indian store which I keep in the freezer.
2 heaped tblspns cornflour mixed to a paste with a little water.
1.5 tsp fresh thyme leaves
200 - 300mls lite evaporated milk (depending on how thick you like it) - I used 200mls of the coconut flavoured variety but plain would be fine.
Freshly ground pepper.
Grated parmesan cheese for serving.
Preparation:
Place mushrooms into the TM bowl and pour 250 mls of the boiling water over them. Leave sit for 20 minutes.
Blitz 10 sec/speed 8.
Add remaining 500mls of boiling water to the bowl along with the veg. stock concentrate and dried onions.
Cook 6 mins/100o/speed 2.
Remove the lid and stirring with a spatula, add the cornflour mixture along with the pepper and thyme.
Add the milk and cook 4 mins/100o/speed 2.
Serve with grated parmesan sprinkled on top.
