Bulgur and Chickpea Soup:
Number of People: 5-6
Ingredients:
100g onion
20g olive oil
40g tomato paste
1000g water
35g Thermomix vegetable concentrate
60g finely ground bulgur
Salt (I didn't use)
250g boiled chickpeas
Dried mint, red pepper flakes
Preparation:
* Chop onion for 2 seconds on Speed 6. Clean down the sides of TM Bowl with spatula and repeat it. Clean down the sides again
* Add oil and saute for 4 minutes at 90ºC on Speed 1
* Add tomato paste and saute for 2 minutes at 90ºC on Speed 2
* Add water and vegetable concentrate. Bring to boil for 9 minutes at 100ºC on Speed 1
* Add bulgur (and salt if needed). Cook for 7 minutes at 100ºC on Speed 1
* Add chickpeas. Cook for 3 minutes at 100ºC on Reverse / Soft Speed
* Serve into the bowls. Sprinkle with mint and pepper flakes

I might try this one with Freekah as I have some in the pantry.

I haven't heard of freekah before. I checked on internet and it seems similar to bulgur. I believe it could be a good substitute though I've never used it

Thanks farfallina - sounds good as usual. Yes Freekah is a good substitute - green ? wheat.
