Starters and Snacks / Spanish Omelet
« on: January 27, 2009, 05:02:12 pm »
Name of Recipe: Spanish Omelet (Tortilla de patatas)
Number of People: 4
Ingredients:
 - 200 gr onions in quarters
 - 100 gr extra virgen olive oil
 - 400 gr peeled and sliced potatoes
  -100 gr water
 - salt
 - 5 eggs

Preparation:
1.- Chop the onions in the TMX bowl for 4 seconds, speed 4
2.- Add the olive oil and cook for 7 minutes, Varoma Temperature, soft speed  ^^
3.- Place the butterflies. Add the sliced( or squared) potatoes , the water and the salt. Cook for 13 minutes, Varoma Temperature, counterclock  :-: soft speed  ^^
4.- Take off the butterflies. Place all the stuff of the TMX bowl into the TMX colander (steaming basket) in order to get rid of the liquid (the olive oil and the water). Place the potatoes and onions into a bowl. Reserve
5.- Without cleaning the TMX bowl, place the eggs and mix them for 10 seconds, speed 3.
6.- Place the beaten eggs into the potatoes bowl, smash a lit a bit with a folk and leave it there for a while (5-10 minutes)
7.- You can cook the omelet in a pan, then: put a bit of extra virgen olive oil in a pan until itīs a bit hot (moderate- I have induction and I put at mark 5 or 6 maximum) , place all the stuff of the bowl into the pan, cook for 5 minutes or so, stirring from time to time so that the omelet doesn't stick to the bottom of the pan. Once the bottom of the omelette has set, turn the heat down low and cover the pan. Turn the omelet by placing either a flat plate or saucepan lid on the frying pan and quickly turning over. Continue frying this side for about 5 minutes at moderate mark too.
If you donīt want to cook the omelet in a pan, you can do it in the Varoma tray. Clean the TMX bowl after you beat the eggs, place 500 grs water and boiled for 3 minutes at Varoma Temperature, speed  1. Put the beaten eggs with the potatoes into individual small containers that can go into the Varoma tray. Cook them for 10 minutes at Varoma Temerature, speed 1.
I hope itīs clear enough  ???
Photos: Iīm sorry but my husband and his friends ate it all. I promise one picture for next time

Have a look to this, the only problem with Picasa is that you have to download it image by image and it takes time

http://picasaweb.google.es/megarecetas

another one : http://vagos.wamba.com/archive/index.php/t-222822.html ( here there are some TMX magazine scanned)

I am a member there too.   :D :D  When they moved, did all the previous posts get moved?? or did only some manage to get transferred??

You can laugh at my poor Spanish when you look at: http://thermoforo.com/index.php?topic=2252.0

Your English is excellent (mas o menos  ;) )

Thermomixer, Your Spanish is so good that I never thought that you were not Spanish!

I am a member there too.  Do many people use MyCook in Spain?  I believe it uses induction heating, but it is not as advanced in some ways as TMX.

A friend of mine got MyCook for Christmas. She said that it was 200€ cheaper than TMX and it does almost the same. I donīt know, but Iīm so happy with my TMX that I wouldnīt change it.

JD - I made a version of this casserole with what I had on hand.  It was so good, it will now be my basic stew base and I can add whatever I have on hand to vary it.   The changes I made are as follows:-  Only used 30g olive oil, used a can of tomato supreme instead of the puree, red wine instead of white wine and I added 1 zucchini too.  I used oyster blade steak, my favourite for this type of dish as it doesn't dry out as much as some stewing steak and after 9 minutes on the varoma setting, I cut it back to 90o and cooked it a further 35 minutes.  I thickened it with a little cornflour mixed with water and cooked it another 5 minutes.  It was delicious served with mashed potato and peas.  Thanks a lot Macorla.
