I've got to take a step back and either make only just enough for a meal, or make something that will go into the refrigerator - I simply cannot fit anything else into the freezer. That sounds great, but our freezer is just a hotchpotch of containers and you can't even tell what's what, so it could definitely be better. I have freezer envy for a side by side pair - my dream is to have dedicated shelves for things like meat, leftovers, ingredients (frozen fruit, vegetables etc ready to use in recipes) etc. I want to be able to open it and see that I'm low on something instead of ratting through it.

I made some chocolate custard off the chip last night, then put some leftovers into little containers in the fridge, and the girls had them after school - they loved it. I've given it to them a few times and they haven't been that excited, but finally I've broken through, and they'll let me whizz up a batch of that instead of buying the rubbish ones that I do occasionally for a treat. I'm happy to make that for them and have it ready for an after school treat.

I made a tuna mornay today with the Skinnymixer's healthy carbonara sauce. Unfortunately, I felt that the flavour was just a bit too strong, everyone loved it which was good, and I love cauliflower. But it was loaded with garlic and onion, but you simply didn't get that flavour at all, it was dulled down by the cauliflower. No-one at home realises what is in it, and they're happily eating it, but I miss really tasting the onion and garlic, which I love. I will have to be careful about how much I use the next time I make it, I think I may have gone overboard.

I was also going to suggest shortbread - it's simple and versatile, and people love a good homemade one.

I don't have a lot of freezer space, so I'm trying to use up some leftovers before I do more cooking. We had a mystery dish tonight, I was racking my brains trying to remember what it was, and eventually worked it out. It was Moroccan Lamb with cous cous, the recipe adapted from here. However, the photograph that I have looks different, I somehow managed to form them into little meatballs cooked in the sauce. It was really good after we worked it out.

I LOVE hot cross buns, but alas cannot buy them here in the US or bake them at home as I can't buy mixed fruit peel.
The one from the chip has spices and sultanas and currants, and it's great (to me), although it does ask for some grated lemon rind at the start (optional).

I don't really like sultanas very much, and usually avoid hot cross buns because I end up picking out all of them. However, I love them, and don't feel the need to pull out the sultanas. My oldest daughter likes them, possibly not loves them. My youngest daughter has decided that she hates them because of the sultanas.

I think of crepes as pancakes, but then I go somewhere like The Pancake Parlour and realise they're not. But their pancakes are quite thick and actually pretty tasteless, it's the accompaniments that make the dish. I think of pikelets as small and round, but about twice the thickness of a crepe. I make pancakes (really crepes) and add in vanilla stevia, so they are sweet on their own, without topping. We either do the lemon juice and sugar, or maple syrup toppings.

You can usually fix them! I replaced our hard drive recently, and in my mum's too. That's one of the best things about them. Good quality appliances tend to be worth the investment, which is why I'm happy to join the Thermomix club. I expect to get many years from it.
