Beetroot salad from EDC

Made this salad today. Very yummy. Made loads.
An alternative to coleslaw.

Amy - Always used to reduce the amount of onion though. I found it a bit overpowering.

Curly66 - I love beetroot but never thought I would EVER eat raw beetroot until I had this salad at a demo.. absolutely delicious.

Kimmyh - Love this fresh tasting salad with crumbled feta on top. This is a regular in our house too. My boys love it with the feta sprinkled over the top. I don't always use mint but always include the coriander.

Frozzie - I hadn't actually made this before I went to a demonstration as an extra person needed lol as it hadn't appealed to me but it was quite nice and think it would be even better with some fresh goats cheese crumbled on top however there are some great health benefits from eating this salad.  The next day after the demo I came home and made a double batch with a friend and ate most of it over a couple of days.  I had been feeling rather unwell for some time and it didn't click why I was feeling much better for no real reason until I looked up the benefits of raw beetroot..its one powerful raw veg... I used mint and also didn't have the dressing just the carrot, beetroot, apple and onion and mint...
Some but not all of the vitamins and minerals in beetroot are Potassium, magnesium, fiber, phosphorus, iron; vitamins A, B & C; beta-carotene, beta-cyanine; folic acid.  Beets also contain betaine, the same substance that is used in certain treatments of depression. It also contains trytophan, which relaxes the mind and creates a sense of well-being, similar to chocolate. Beets can also lower your blood pressure.  They are great for energy levels too.
I ate a whole lot before my blood tests and have felt better ever since so am now going to make this on a semi regular basis..who needs a doctor if your eating the right kinds of foods.

Cecilia - This is a great dish and always popular.  Do you include the coriander?  Some people whinge about that at the demos but that is generally before they taste.  It makes such a lot.  After using as a salad, I whip some of the leftovers up with a packet of cream cheese to make a delicious dip and/or use leftover beetroot salad with vege stock concentrate and water added as a quick and easy borscht.

Tam -  It really is delicious.  I must say though, I don't like it nearly as much without mint added.  A work of warning, be REALLY careful when blitzing this salad as lovely little chunks of beetroot turn into mush really quickly.  I cut the carrot up in small chunks and try to blitz once first as I always seem to have big chunks turn up in the bowl.

consumerate - I made this today. Omitted the onion and coriander because I want to keep it in the fridge for a few days. Really impressed with the flavour and will definitely make in the future.

Katj - I always add approximately a 2cm piece of fresh ginger also. It adds an extra depth of flavour.

Aimee -  It was my staple work lunch alternating with feta or a tin of tuna.

I used to love this with steak and homemade chips ;D

Back when I ate chips. And steak, for that matter...

Always used to reduce the amount of onion though. I found it a bit overpowering.

I had this at my demo and it was nice. I wonder how it would go with whole baby beets from a can which I assume would be cooked? It might be sweeter but perhaps a bit mushy?

I definitely wouldn't use canned beetroots Thermo Mrs. You would end up with a beetroot paste :-X

Yeah I think you're right, it wouldnt be very appetising to have a beetroot paste salad  :D

sorry forgot to say i used mint and also didnt have the dressing just the carrot, beetroot, apple and onion and mint...

not sure if thats what it was that made me feel better but nothing else makes sense..either that or ive gone mad lol  will certainly be making more and was very surprised of the number of benefits of beetroot..  I was also taking vitamins but on their own werent doing much..
