Name of Recipe: Mango Kulfi
Number of People: 10 - 12 serves
Ingredients:
2 tblspns almond meal (or 20g blanched or flaked almonds - pulse on turbo briefly to make the meal)
230g chilled evaporated milk (I used low fat)
400g chilled can condensed milk (I used low fat)
350g thickened cream (35% fat)
150g frozen mango cubes - you can use fresh or canned

Preparation:

I just threw everything in together and beat for 10 sec/speed 7
Pour into a metal tin or individual moulds and freeze overnight.
Remove from the freezer 10 minutes before serving or less if in individual serves as shown below.

Tips/Hints:

I allowed it to set over night then removed from the freezer for 10 minutes, cut it into logs and wrapped each one individually for easier serving next time.

This recipe was posted in our weekly local paper which has a Taste.com.au section and was called Ragini's Mango Kulfi. It is different from the one in the Indian Cookbook.

Jamberie - Oh yum! I've made this today ready for my Indian dinner party this Friday. It was so simple to make. I think including clean up it took less than 5 minutes!
Little jars of kulfi are now in the freezer ready to be adorned with praline and Persian fairy floss before serving (I'll try to post a photo if I can!) If anyone is after a super quick dessert to make in advance,  try this one.

Oh yum Judy. I have cut out a recipe for Kulfi from our newspaper a couple of weeks ago but it is different to this.
May all dairy items in your fridge be of questionable vintage.

Obviousy many kulfi versions just the same as our ice-cream Cookie.  I will try the Indian Cookbook one another time to compare - it is much lower in calories.

The additions will really take the dessert to the next level Jamberie. I haven't made this since I posted it but I do remember really enjoying it.

I love the one from The Indian Cookbook, this one sounds great for a make ahead dessert. I have never made an 'ice cream' dessert in the TM, that could be made ahead. Have always made them at the last moment. Thanks JD,  will try this next time we have an Indian night.

Last night we had some friends over for an Indian curry night, so I served this for dessert.

My DH has a nut allergy, so even though I've looked at this recipe several times before I've never made it. I had thought about making DH's serve first and then adding the nuts to the rest, or just leaving the nuts out completely, but in the end I decided to substitute sunflower seeds for the almonds. I blitzed the seeds first and then continued with the recipe. I also doubled the amount of mango (only because last time I made DH mango ice cream he requested I add more mango, so I thought I'd better add more mango to this!).

Everyone loved it and licked their plates clean. DH is pleased there are still some leftovers in the freezer.

Seems reall easy, I like kulfi but never tried it and also now I have a whole box of mangoes DH got so that we can freeze, will have to try this recipe :) Thanks Katie for bumping

Given Sydney's hot weather I tried the mango kulfi.The only additions I made was to add a few saffron threads (soaked in a bit of warm milk) and 5 cardamon pods (crushed for seeds). It was a huge hit with two people wanting the recipe. Thank you Judy!
