Oh great! I love the idea of Ryvita! Just a little bit healthier than Jatz/Ritz. I'll definitely use them next time!

Definitely going to try making these. My boys LOVE chicken nuggets!!

AM2B, I didn't even measure my crackers ;D I just measured with my eyes how many crackers I thought it would take to coat my chicken. I think it depends on the crackers too, some are quite "airy" so would weight less than denser, grainy crackers :)

I'm sure your boys would love these, they are delicious :D
