Sourdough Waffles

This recipe is adapted for the Thermomix, from Yoke Mardewi's book Sourdough. The waffles were cooked on an electric (Sunbeam) Waffle Iron. They are amazingly light and crisp. Like most Sourdough recipes, the premix is left to work overnight. Next morning the final ingredients are added and again one must wait until the mix doubles. Usually 3 to 4 hours.

Step 1

Into TMX bowl place
25g of active starter
100g of white organic or spelt flour
200g of filtered water. If the weather is cold, use warm water.
Mix, speed 3 for 10 seconds, scrape down and mix for 20 seconds.
Leave lid on with cap in and place in a warm spot to rise over night.

Step 2

Next morning add to starter in bowl
120g of eggs, weighed without shells. I beat 3 eggs in a bowl and then tip 120g into bowl.
50g each of full cream and sour cream
80g flour
1 teaspoon of salt
2 Tablespoons of raw sugar or honey

Butter or oil spray for Waffle iron

Mix on speed 3 for 1 min., scrape down, mix 30 seconds, speed 3.

Pour into a large glass measuring jug, and cover with plastic. (This is so you can see that the dough is expanding) You may not see bubbles on the top but the height in the jug will grow.

Cook on a hot preheated waffle iron that has been buttered just before cooking.

Will make 8 full waffles. Can be reheated briefly under a grill or in a toaster.

Can be frozen.

They look lovely Chookie. All I need is the waffle maker and then I could have them with home made jams and of course some honey.
May all dairy items in your fridge be of questionable vintage.

It seems we have one thing and not the other - I have the waffle maker and not the sour dough starter.  I managed to kill mine  :P

Don't,  don't buy a waffle iron.!!!!  DH ate 4 whole rounds and I ate 2/5 of one.  (that is how I know they are light and crisp) ;D

We have waffles at least once on the weekend as a breakfast treat for the kids - we have this waffle maker now, used to have one like yours chookie and killed it with use lol

Stop this right now. I do not have a waffle iron, and am trying to cut down on clutter. At the same time, if I can meekly ask tho...could you class the iron as a necessity?  This is really bad cos I have never even had a waffle but the pic looked so good that I would succumb with minimal encouragement.

Faffa, love the look of this iron.
CP, the Sunbeam iron is not expensive and easy to store.  Although it is another gadget.  With the children I used it a lot for a quick sweet.  We sometimes have waffles when we have visitors, but I stand at the bench and make them while they eat.  Like I do with pancakes.  I put it in the category with the yoghurt maker.   I could live without it,  but it is handy.   I also have an electric iron that makes large flat Italian wafers.  These are more of a biscuit.  Uni will know about these.  I will take a photo later so you can see this.

I think you could make it with 1 teaspoon of dried yeast.  WHere it says starter,  just replace this with yoghurt and add 1 teaspoon of yeast.   Then just follow the instructions.   OR bung every thing in to TMX Bowl mix and let stand in a warm place for 30 mins.

These are the Italian wafer biscuits.  They are called Pizzelle.  You can spread with Jam, Nutella or dip the edges in chocolate.  Can use as a snack or serve with Icecream.
