To achieve a flat bread roll is easy. Use any bread recipe,(today i made a hybrid mix of No Fuss and Tang Zhong) and after the rolls were formed and risen, and as I placed them in the oven ,I placed an oven tray on top of them. I sprayed the underneath of the tray, that is the part that would sit on the rolls. with Canola spray. They continued to rise in the oven, but not up, but out. I again used the Muffin Top tray and brushed with egg wash.
The roll at the back of the photo is the 'control' roll, that is cooked without the tray on top.

Would this method work for pre cooked pizza bases? I have tried to precook them and I end up with a big puffy thing that is unuseable never thought to place a tray on it ? Though we normally make our pizzas fresh there are times when it would be great to have some prebaked bases in the freezer. Any tips appreciated.

Is it necessary to put a weight on the top tray?

Cuilidh, didn't put a weight on the tray, but you could. All depends on how flat you would like them. The tray I used was pretty light, next time I am going to use a heavier one.
Deeau, I think you could use this method for Pizza bases, however it would seem that you may need to roll your bases out more.

Deeau I always prick my pizza bases with a fork to stop them rising up.

OK I wil ltry the pricked fork method, I do roll them out to use the same pan that I would use for cooking them with topping from raw, but they came out like a giant dome... did give the kids a giggle! :D
