Made another tonight for tomorrow lunch.
Apple and blackberry from freezer.
More fruit, base and top spread thinner. Will report after tomorrow.

That's so true, cookie. I am thankful that he offered to cook. He wanted to make lemon meringue pie from the EDC...and I said "are you sure?" That has 2 components that I've not even tried making before: meringue and shortcrust. That's when I suggested Chookie's lovely teacake

I thought mine was going to be a disaster as the pastry was very very sticky - large egg. But, it was fine. I got sick of trying to get the bits off my fingers and onto the top, so it's not completely covered. I used spelt flour and rapadura sugar, so it looks darker, but it's yummy.
I think I'd leave the egg out of the pastry next time. I have a similar recipe for apple streusel slice and there's no egg in that pastry. I also added the lemon zest to the filling.
