Choc Hazelnut spread from the EDC

Hi just a question about this recipe. Mine looked and tasted a lot grainier than the pic in the EDC and a lot lighter. Does anyone have any words of wisdom on this?

yeah mine too, and tasted nothing much like nutella. i figured next time i'd use dark chocolate to make it rather than milk (was too sweet too) but can't help on the graininess

DEFINATELY go the dark chocolate although mine was still grainy would love to perfect this one

Same here!
My kids complain that it is too grainy and not as nice as Nutella. ???

Yes it does and the first thing the recipe needs to specify is to use DARK chocolate. If you use milk it is so sweet it is sickly, even my kids wouldn't eat it with milk chocolate  :-\

Hmm they are easy....something I noticed to Karen in these recipes they toast / roast the hazelnuts and then grind to a butter...could be something in that  ??? ??? ???

i just did the second one - i think you definitely need to grind the nuts alone first - i added the chocolate at the same time and it is still gritty. i did cook mine slightly though and that seems better than not. i also doubled the chocolate (it didn't use  alot)

Hi, I just made chocolate-hazelnut spread, and I liked it!
Grind 100 g toasted hazelnuts, 10 seconds speed 10.  let cool.  set aside.
Heat 50 g heavy cream, 90 g whole milk, 1 tbsp powdered milk, and 10 g canola oil 3 minutes temp 80 speed spoon
add 150 g semisweet chocolate chips (ghirardelli) and let stand 1 minute.
mix 1 minute speed 1
add the ground hazelnuts and mix 10 seconds speed 7
It will not be as thick as canadian nutella, more like european Nutella.  although not as sweet as either of them, and you will definetly taste the hazelnuts... thats why I liked it

My new consultant, Andrea, makes it with tahini instead of hazelnuts so the kids can take it to school.  That may be a smoother result?

oh what a fabulous idea! i can never get through a jar of tahini, and dd would love to have it at school sometimes as a treat ;)

Nice to hear you have a new consultant Thermomixer - did she find you or did you find her ??? ???  Will she let you print her recipe in full for the Tahini Nutella?
