Title: Delicious Almond Milk

Almond Milk

Makes 4 cups

Ingredients
1.5 cup raw almonds
4 cups water
3-5 dates (optional), or honey to taste if you like it sweet.

Instructions
1. Bring 2.5 cups water to boil (100ºC/ Speed 2/ 2 mins)
2. Turn off heat and add in almonds and dates. Cover and let stand for about 2 hours.
3. Blend till smooth. (turning up the speed between 5-9, 2 mins)
4. Strain through a muslin cloth. Drink chilled.

Hint:
The filtered almond can be used to top cereales or to make muffins. Keeps well in the fridge for 3-4 days.

It is also good for cooking belly pork in - I have a recipe that I keep wanting to try from Jane Lawson.  I even bought the belly pork on Tuesday but then had to freeze it - maybe tomorrow with squid entrée and sweet potato gnocchi.
