This recipe is from the new baby and toddler cook book released recently by Louise Fulton-Keats also featured on the morning show last week.

These were moist,  flavorsome and so easy to make. Great lemon to cream cheese ratio. The boys loved them! Will be making these for the boys birthday party next month! 5/5

I made these too but somehow managed to forget to put in the oil. Didn't matter as they still turned out beautifully.

I made 24 mini cupcakes instead and will be making again as they are so easy.

I got this recipe free from the authors website and am definitely looking at buying the book in the next month or so.

I also made these for a children's picnic day. I added about half a cup of Cadbury choc buds and decorated with a few on top of the cream cheese icing. They were really yummy and enjoyed by both the kids and mums. I found them to be a little oily on the bottom though so will be cutting back on the oil next time.

These were Yummo! I didn't make the icing.. A sprinkle of icing sugar worked here as I didn't have any cream cheese.

Question though... When I removed the cake from the wrapper,  a lot of the cake stuck to it,  and they weren't really removed from the paper easily like with other cupcakes. Does anyone have any ideas on how I might remedy this?

They were so good I'll make them again anyway, they'd be perfect though if I could remove more cake from the wrapper.

Um.... So I've just found a ramekin with the amount of oil that was supposed to be in these cupcakes! Oops! Perhaps adding any oil would've helped!

I found these delicious. Made them for a kids party, coloured the icing and piped it on. The icing recipe piped really nicely :)

I hate carrot cakes in general but these were surprisingly delish!
Didn't make the frosting.
Also I use half the oil and half apple purée.
