Bread / Best type of Grain?

Hi, Just woundering what the best type of Grain is to buy ie Buckwheat or whole wheat?

What is the difference between them. Does one produce a light type bread? Is one healthier?? Or what is the healthiest type to use. I use buy a 9 grain whole bread, & want to make something similar but know nothing about grains????

Suggestions and Complaints / Hard Ice Cream

Does anyone have a tip to why my ice cream sets rock hard like ice? It tastes yum but difficalt to get out. My lastest ice cream made was EDC blueberry one. I used blueberries, frozen milk & cream, sugar. Tips please???

Main Dishes / Thai Chicken Patties

Name of Recipe: Thai Chicken Patties

Number of People: Makes 16 Patties

Ingredients:

400g      Chicken
¾          Onion
2           Cloves Garlic
¼          Red Capsicum
1           Zucchini small
1 tbsp    Soy Sauce
1           Egg
2 tbsp    Coriander
1 tbsp    Lemon juice
1 cup     Breadcrumbs
             Salt & pepper (to taste)
             Sweet Chilli sauce to serve

Preparation:

•   Preheat oven to mod hot 200 deg fan forced
•   Mince chicken in TM bowl & set aside
•   Add onion, garlic & coriander to TM bowl & dice for 5-10 secs on speed 7
•   Add capsicum, zucchini & chop for 5-10 secs on speed 4
•   Add chicken back to TM bowl, add egg soy sauce & breadcrumbs, lemon jucie, salt & pepper & mix for 10-20 secs  on             reverse soft speed 2 (or until combined)
•   Spoon mixture & form flat pattie the size of an apple.
•   Place on baking tray lined with baking paper
•   Bake in oven for 20 – 25 mins until cooked. Turn halfway mark

Serve with sweet chilli sauce (if liked)

I am very new to TM cooking so any tips are welcome in adapting this recipe that I love & so do my kids. I made this tonight & was a winner in my opinion!! Very easy & quick.

sue h - Another thermomix hit. We had friends over for lunch, they were still warm and perfect for kids and adults. The recipe is very generous so we had them for lunch again today with a platter of assorted fruit, green salad and left over capsicum dip (TM of course). I finally used all my store bought sweet chilli sauce too so I can't wait to make my own.

Hi to all,

Just got my thermomix 4 days ago & haven't stopped cooking & eating. Learning slowly but loved everything so far. Can anyone tell me the absoulte necessities to always have in the house to make the basic dips, sorbets, custards & kids snacks. This would greatly help.
