Name of Recipe: Yummy Crumpets
Number of People: Depends on size made & appetite - at least 2 very hungry people (hopefully 8 - 10)
Ingredients:

375g bakers flour
1/2 tsp caster sugar
1 heaped tsp dried yeast
about 300ml tepid milk  (you may need more - see the comments below !!!)
about 200ml tepid water (you may need more - see the comments below !!!)
1 egg
1/2 tsp salt
1/2 tsp bicarb soda
4 egg rings
Oil for greasing


Preparation:

Place 1 Tbsp of the flour, sugar and yeast into TM bowl with 100ml of the milk into the Thermomix bowl. Set to mix for 3 minutes at 37°C on speed 2. The mixture should start to become frothy.

Add remaining flour, milk, water, egg and salt. Mix for 10 seconds on speed 7.

The mixture should resemble a thick batter rather than a bread mix. Add some more tepid water and mix again at speed 7 if necessary. Then mix for 8 minutes at 37°C on speed 1.

Leave the mixture in the TM bowl to prove for about 1 hour or until the surface bubbles.

Add the bicarb soda and gradually increase the speed to beat at the mixture for 2 minutes at speed 5.

Oil the egg rings and frypan. Place the rings in the pan and heat for 1-2 minutes.

Pour batter into each ring and cook for 5 minutes, or until the surface has dried and is full of holes. You may need to puncture a few holes for visual effect if you like. Lift off the rings and turn the crumpets to cook on the other side for a minute or until golden. Transfer to a rack to cool.

Clean and oil rings and frypan and repeat process until all batter has been used.

Serve warm with butter and your favourite topping.

Tips/Hints:

The leftovers (ha ha ha !!) may be frozen with pieces of baking paper between crumpets and toasted as needed.

We had moderate success with these.  The mixture was probably too thick - more like a very soft dough than a thick batter.  We were able to save the day by cutting the crumpets in half and toasting them - very yummy though!

I made these a couple of weeks ago and they were great!!  The kids were a little sceptical about home-made crumpets, but scoffed the lot.  I ate mine with Tenina's Lemon Butter and was very happy!

thanks for the feedback Dean.  I had mixed success with the first batch or two or three, and the amount of milk/water is "liquid" as it seems to vary - maybe with the flour, ambient temp ??  Don't really know what the varianble may be, but now I know what thickness the batter has to be so add more water if needed (start a bit on the thicker side so you can add water).  The first ones were toooo watery and dribbled out under the rings.

Also, started adding bicarb after seeing it in a recipe from UK and this helps increase the number of bubbles.

Usually they go pretty quickly even if not 100% when you put sime butter and honey (or your fav topping). 

Keep experimenting, they will work - pictures are there to prove I did do it  ;)

Made my first batch of these today, not altogether a success as the batter was far to thick.  Will try more liquid next time.  They tasted great despite looking a bit odd

Ah can see I have tempted you too strongly :).  I intend to have another go if I can ever pry the thermomix from DD2 who is currently making ice cream and is determined to experiment as much as possible.

I have successfully added more liquid even after proving has finished and it still turned out thicker than I thought it was going to be - you can rescue them lol ;)

Well I made these last night! They were delicious! I made them in my electric waffle maker, beautifully! easy no mess, no washing up! I didn't change or add any extra liquid, except  I ran out of flour (minus 25g flour) so I used 25g wholemeal, and they were amaaazing! Makes me want to experiment in making Irish potato bread, instead of flour, adding potatoes, can anyone suggest anything?

Here is a picture.  Sometimes they have handles to make them easier to use.  Can be metal or silicon.
This picture is of their traditional use, to create a nice shape when frying eggs.

Thanks CB - the egg rings are usually round (but I found some heart-shaped ones) and they mainly are to hold eggs that are being fried for things like hamburgers(think McDonalds).  But useful for crumpets and some pancake batters too.

Definitely - we have them with butter and honey sometimes or savoury toppings like bacon and eggs.  Vegemite ( a yeast extract like Marmite), jam, just butter are all regulars on our crumpets.

I tried these this morning for the kids.  I did have the batter too thick to start with and it wouldn't cook through, however, adding a bit of water to the batter made a huge difference.  The kids tell me that they taste better than the shop ones!  I have frozen the leftovers and will see how they go.

I can't believe it took me so long to try this recipe.  They are just wonderful!!!  I tweaked the recipe a little as I wanted to use milled and soaked whole grains and they turned out really well.

I only thought the same thing the other week Chelsea.  Seeing them at the supermarket reminded me that I have been wanting to make these since last winter - maybe I will get around to it this winter. :P :P  Yours look great.

I used a mix of organic stoneground flour with organic rye and some lupin flour.... still turned out beautifully and fluffy...  :-*

Fab, recipe.  Made 3 maxi crumpets in a 23 cm. crepe pan.   Each cut in to 4.  Best to cook top under grill to preserve the bubbles.

I made these this morning, thank you for the recipe, Thermomixer.

They were very yummy, and didn't need pricking with a skewer to make more holes, very fluffy and bubbly.

I found the best ones were those cooked medium - low with a fair bit of oil.

Ours made enough for 3, and I'd think it would actually serve 4-5. :)

Welcome and thanks bigTcup.  It was one of the first recipes that I made because I thought that it would be great to make with the TMX able to heat to 37 degrees.  We love them still and I am glad others enjoy them too  :-* :-* :-* :-*

Made these again a couple of days ago.  Fab recipe,  but being a messy person I have finally worked out how to get the batter into the rings without dropping it all over the stove.   I bought a plastic bottle (for filling cup cakes).  Both ends come off and one has a spout.   It takes nearly all the batter.  You place the rings in the pan,  tip the container up and squeeze and it flows into the ring.  You can control how much you put in.  Bought it from a kitchen shop in Adelaide,  $20.

Thought I might have a go at making these! I have got egg rings but thinking the batter could stick if not oiled enough, was wondering If anyone has tried with a pancake maker? We were given this for Christmas last year and it makes two pancakes at a time, probably about the same size as a crumpet. I'll report back how I go. Don't expect a photo because I wouldn't have a clue how to do that !!!

I am going to try make crumpets tomorrow morning, do you think bread/pizza 00 flour would   be ok to use this type of flour. We buy in bulk so it would be great if ok to use

fundj,  I used bread flour.   Good result.  Also had a go at making some in small pancake pan with moderate success.   On the stove not an electric one.

Ok so I've just made these. You would have to be organised if you did them for breakfast. Got pretty good review from hubby and the boys. I used my electric pancake maker. They tasted really yummy, but I think next time I will try the egg ring in the frypan, then do as Chookie says and put the bubbly side under the grill. It made 9 crumpets so have 3 left for each of the boys to have one for breakfast. I'm not sure how thick the batter should be, but mine was very gluey and quite hard to make small ones. I might add a bit more liquid next time too.

OK. These were soooo delicious. At first too thick, maybe because I used some wholemeal. Once I watered them down a little they were perfect. 2 thumbs up from everyone. Next time we have friends over for breakfast we're going to make them on the BBQ. Has anyone tried this before?

At first way too thick and sticky I used scissors to cut the batter. I did add more water. I made a few in my pie maker a bit small but ok, heat up pie maker 1st then cook with lid opened.

I just made these today for morning tea and they turned out very well.  After reading all the comments, I was a little daunted, but how do you learn if you aren't prepared to try and make some mistakes on the way.

The batter was thickish, but not too bad - it's very, very, humid and hot here today, so maybe that had an impact, I certainly didn't need to add any additional water.

Anyhow, will be making these again as they were a real hit with my husband.  He was simply amazed at how well they turned out and then totally blown away by the taste and texture.

Had to bump this again. Tried recipe for the first time - liquid volume was just right for my flour - a thick pourable batter. Made 22 crumpets and DS17 took 12 with her to a friends house - officially "the bomb" once the had devoured them (apparently this is a good thing  :-))  ).
Easy to do - managed to overfill a few egg rings but still turned out OK. Best eaten the day they are made, which isn't hard in our household. Could do a half batch but getting half an egg is tricky - probably OK to use a whole small one anyway

They freeze really well  ;) ;) Don't get too many frozen here though I do try to sneak a couple in for those mornings when we really need to go and do the shopping  so we can eat lol

I tried these this morning and they were a huge hit. The kids love them.


My only disappointment is that because of the prooving step it takes about  1.5hrs to get to the point where you can cook them. This really makes them a weekend breakfast only, not a school day brekky. Boo hoo.

Do you think it would work preparing the batter the night before and then sitting in the fridge and cooking the next day?

Have made these a few times now. They are a favorite for our BBQ breakfast. I just put some batter in the small egg rings and BBQ on a medium flame. A quick flip to crunch the bubble side and all done. The BBQ Plate is a good size and I just bought heaps of egg rings from the op shop. Saves heaps of time and they are the erfect size for steamed eggs, bacon, tomato and spinach.

MP,  I think you can make the basic batter ahead,  but add the carb soda at the last minute.   I haven't tried this but think it would work.

Crumpets have been on my 'bucket list' for some time and they didn't disappoint :)
The only problem is that I don't think I'll ever be able to have bought ones again.

Still experimenting with getting enough bubbles...the first lot were great, each subsequent batch had less bubbles...am wondering if it is something to do with the distribution of bicarb...we'll see.

They do look good. I was reading this whilst eating poached eggs on (store bought ) crumpets. I told DD about this recipe and her eyes lit up. I think that this means we will be trying them soon

Thanks everyone :) I'm going to have another go at them soon, to try to perfect the bubbles! This recipe is very similar (with nearly exact wording) to Thermomixer's recipe in the In the Mix book. Do you think it might be worth linking them (if not already!)?

Jam,  love your crumpets.  I have a few goes over the years.  Metal rings are better than the large plastic ones, but hard to find.  Look at adjusting the temperature of your frying pan for the bubbles.  I also think that the carb looses its kick after a while.
