Rainbow, just wanted to let you know that this got the thumbs up from everyone - even my two fussy ones - DS - 18yr old and DD - 6 yr old. Very happy and will definitely be made again, maybe by one of my DS's.

I too have had failed mayonnaise - I think only twice but ended up buying a jar as I wasn't game to have another go. Thanks QuirkyJo for the advice about using the failed mayo and trying again. I actually used the failed mayo on my shredded chicken salad from the MOM cookbook as it was like a dressing. No one seemed to complain. My sister has had success every time with her mayo and I had planned to see her make it at Christmas time while I was with her but she already had a batch and didn't need to make more so we didn't get there. Anyway, after Dede's success I will keep trying. I know the first time was the result of not having the egg at room temp but the second time I got the egg straight from the chook pen so don't know whether it was just adding the oil too quickly that did it.

Hi,

I have made these two treats from the Rawlicious Cookbook to have for Christmas time at my DS's farm.

My trial run on the Cinnamon Bars got taken to work by my DH and consumed in one trip - with the thumbs up. He very much liked the taste of the craisins that comes through nicely. I have made a double batch & am going to make another double batch. One lot will be dipped in melted chocolate - so the kids are more likely to eat them -DH's suggestion. They certainly don't need the chocolate but it will hide what is in them.

I ended up rolling my Cinnamon Bars into a log shape in the cling wrap and putting in the fridge that way. Once they harden you can then slice them into rounds to serve. The recipe said to use a vanilla bean which I didn't have so used a teaspoon of vanilla bean paste. The first time it came out a bit too oily so learnt from that and used less coconut oil. Can't remember how much less. Will check when I make another double batch today.

The Heavenly Coconut Balls are just three ingredients and really simple to make. Honey, coconut and cashews. I roll mine into balls and it is like having hand cream - the honey and nut oil feels really good on the hands and I reckon the recipe could somehow be adapted to make a hand cream or facial scrub - if anyone is so inclined. As a treat they are yummy and got the thumbs up from my fussy 6 yr old DD.

Highly recommend both recipes - healthy treats for this time of year.

Love the look & sound of this fudge, but oh boy will need to brush the teeth afterwards - that's a lot of potential tooth decay there, besides the extra tire around the middle. Did, I say I like the look & sound of this fudge?? Yummo!

Hi Cathy, sorry I haven't got onto this earlier. Haven't been on the forum for a couple of days.

You need to start with an A4 piece of cardboard which I lay & staple a piece of baking paper on and then roll up to form a cone which I then staple and sticky tape together. Sit this in a tall glass or vase. You will probably need two of these. Trim the opening so that it will sit straight when filled with the rocky road.

[b Rocky Road Christmas Tree

Ingredients[/b]
700g milk chocolate melts, melted
250g dark chocolate melts, melted
500g marshmallows
250g salted peanuts

Decorations
100g white chocolate melts, melted
100g dark chocolate melts, melted
coloured chocolate bits or mini M&Ms

Construction
In a large bowl combine the melted chocolate with the marshmallows & peanuts. Mix well to combine. Spoon mixture into cone/s, pressing down well. Allow the cone to stand upside down in the vase/jar for a few hours in the fridge to set. It can then be stored on its side in the fridge, for up to 3 weeks, until ready to decorate and give.

To decorate: melt the chocolate in separate bowls and I use a spoon to drizzle the chocolate over the "tree" by holding the tree on its side and turning it slowly as I move the spoon to drizzle the chocolate to give it the appearance of tinsel. Working quickly, press some mini M&Ms or coloured chocolate bits into the tinsel to give the appearance of lights. You can add something on the top to make a star.

I then usually pop it back in the fridge to set the chocolate and then wrap in cellophane and tie with ribbon.

I had a tradition with my older children of giving their teachers a Rocky Road Christmas tree that I learnt how to make at a craft group years ago. The teachers always loved it and in the end other teachers were commenting that they would like to have some. I then homeschooled my children for a number of years so didn't make it but my youngest DD was at kindy last year so I made one for her teacher and the teacher's aide and they were very enthusiastic about them. These tress contain nuts but I wrap them in cellophane once they are decorated and give them to the teachers last thing on the last day of school so they can take them straight home. Will have to get the ingredients together to make them for this year as my DD is at pre-primary. They are not a TMX recipe but I can probably chop the nuts in the TMX. From memory they were in a Food Ideas mag quite a while ago.
