Iced Apricot Tea

½ liter boiling water
4 tea bags (I use Indian but you can also use green tea)
200g sugar
50g dried apricots, roughly chopped
350g ice cubes
1 liter water (chilled if possible)
15-30 ml lemon juice (adjust to your personal taste)

Infuse tea bags in boiled water for 5 minutes then strain and cool.
Grind sugar 30 seconds/speed 10.
Add apricots and ice cubes and pulverise 30 seconds/speed 7
Add rest of water and lemon juice and blitz 1 minute/speed 8

Pour and enjoy - really delicious (don't bother straining - the roughage does you well). If you want to get really fancy schmancy, serve with a cocktail cherry pierced with a sprig of mint.

I made this one today  :) very nice but also very sweet,next time (prob tomorrow) i'll make it with half the sugar  :)

I guess it would be fine to leave the sugar out for this as we don't take sugar in our tea. Or do you think the dried apricots need a bit of sugar?
May all dairy items in your fridge be of questionable vintage.

I really wanted to make iced tea today but had no lemons or juice :( I need a neighbour with a lemon tree.

I have around 4 dozen lemons in my fruit bowls at the moment - all landed on my lawn from next door's tree with the strong winds we've had lately.  I can always reach the low ones but it's nice to see the ones from the top have come down too.

I might just have to go and make a batch of this - that will be at least 1 lemon used from my pile  :-))

I have to buy most of my lemons. Our tree doesn't fruit all year. Sometimes BIL gives me some of his, but he picks them up from the ground and they are usually close to rotten. I get enough to be grateful though.

I had a lemon tree in a pot that seemed like it was close to fruiting for the first time (we'd had it years!) and then one day it rained so hard the half barrel it was in flooded and I couldn't drain the water by myself and the poor thing died. My miniature orange and my kefir lime trees are fine though. Not quite as useful as lemons though!

I still can't make this now until I go shopping in a few days' time. Used the apricots for a fruit loaf this morning  :-))

I bought some lemons and apricots to make it, but just made plain lemon iced tea. Will save the apricot version for a few days.

I made the plain lemon version today using 4 lemons and 120g sugar. So refreshing, even DH who is a non-lemon fan, enjoyed it.

This recipe is a good way of finding out if you need to replace your lid seal  ;)
