Desserts / Ice Magic TM style

Name of Recipe: Ice Magic TM style
Number of People: Depends how much you like on your icecream

Ingredients:
100g dark choc (I used dark cooking choc as it was all I had but I would choose 70% in the future)
50g milk choc ( I used green and blacks milk choc)
5 tspn/20g cold pressed organic virgin coconut oil
1/4 tsp peppermint essence or to taste

Preparation:

Break up chocolate place in  *: and mill on spd 8 for 10-15 sec
Add coconut oil and set TM to 2min 37deg spd1 after 1 min scrape down, add peppermint essence and continue for the remaining min at spd2. This was all I needed to melt and combine but melt for longer if needed.

Pour into a squeezy bottle (I used a BPA free Decor brand bottle i bought at BigW) and serve drizzled over EDC vanilla icecream.
STORE IN THE PANTRY - not the fridge!!

Recipe based on Thomas Keller's topping recipe

For plain Ice Magic leave out the peppermint essence. My BIL suggested a mocha one using instant coffe (will try that one next time) The other options for flavours would be to use different essences/flavoured chocolates (alcoholic ones for the adults ;) )

Let me know if you try it out  ;D I take absolutely no responsibility for the amount of icecream it makes you consume either lol

Tips/Hints:
The mixture does (like store bought Ice Magic from what I can remember of it) go firm in the colder weather so just sit the squeeze bottle in some warm water to make it sqeezeable again  :D 8)

Chelsea - I made a batch of this earlier in the week.  It was lovely when first made but wouldn't turn back to the liquid state again after being put in the fridge.  I ran it under warm water the next day for 5 minutes and it was still a very solid block in the squeezy container so I couldn't use it.  The day after that I sat it in a jug of warm water for 30 minutes before I needed it and it still wouldn't melt.  In the end I got frustrated and put it in the microwave for 15 seconds and of course burnt the chocolate.  I followed the recipe exactly and am not sure why it didn't work. Perhaps more coconut oil?

Meagan - Sorry Chelsea I leave mine in the pantry not the fridge. I have added that to the recipe, but maybe it does need more coconut oil. I will look at mine now. Ok yep bottle was quite firm from the pantry, put in in a tall jug filled with slightly cooled kettle water and it remelted, took a while but we used to have to do that years ago when we ate ice magic DH reminded me ( pre children and TM lol )

MJ - Copha is coconut oil with added lecithin, so you could use it. I'd use 1/2 ricebran or grapeseed oil and 1/2 coconut instead perhaps.

Nikkit - it was too yummy and that batch is all gone and we'll have to make more. Thank goodness we ran out of ice cream!
Definitely a keeper.

Lilli33 - We use to put ice magic in the microwave for 10 secs or so if it was firm from the pantry. That should be doable here too. I think I might have to try this this week...

faffa - Meagan!!! I have been resisting this recipe knowing what my lot are like, finally gave in after some more badgering ... IT IS FANTASTIC ,well done.

dragongirly - Hi Meagan - this recipe is made of awesome!  Have indulged myself with ice magic tonight - fantastic.  Thank you for sharing the recipe.

Tasty - I just wanted to know is it ok to double this recipe and how about if i used all of a 200g block of cooking choc (200g) instead of just 150g. Will it still work?

Meagan - I would put a bit more oil in to compensate for the extra chocolate.

I can't for the life of me remember where I read this recipe I am looking for. It was an ice-cream sandwich type thing but was a healthy one using yoghurt for kids. Does anyone know where it is or remember reading it in a thread?? Maybe it wasn't even on here?? I have searched but don't know what it was called so  ??? I'm having a hard time finding it lol

My SIL has just got her TM and is making this tonight. I can't find the tweaks for the sauce on the forum.
I thought coconut milk, palm sugar, fish sauce plus cooking water 4min 100 spd4. Which is what I o for the Asian fillets.
Any suggestions???

Hi I just wanted to drop in and say hi  :D

Dubai is amazing.....the hotel is just stunning and I am sure I have put on about 3kgs already with all of the food!! The conference day for consulants started today and George Calombaris is HERE, he will be involved in the day tomorrow. We all got a copy of the new Asian cook book today, how exciting!! It will be for sale in May. Lots of exciting things for Thermomix in the pipeline.......The weather is warm but not overbearing. My knee is behaving and I am coping well with the one crutch. I feel like I have been away for about a week!!

What I am wondering if I could buy a large glass lidded jar to sit inside it to use instead of the plastic one. Infact maybe I could buy two so I can rotate and have one in the fridge and one making.

Any ideas on where I could get something like this?

Bread / Meagan's pumpkin bread

Ok so after the pumpkin bread question thread I did this today  ;D I wanted to avoid the step of roasting the pumpkin and it seemed to work well. I am sure you would get a stronger taste if you did roast it. I used the recipe Chookie posted as inspiration for quantities. So here we go  ;D

200g japanese pumpkin
20g oil ( I used evoo)
220 Milk ( I used full cream )
300 wholemeal Bakers flour
220 white bakers flour
2 tsp sea salt
1 tsp bread imp
1 tsp sugar
3 tsp yeast
Add to the dough for the last 30 min of kneading 50 sunflower kernels

Peel and cut pumpkin into chunks
Chop pumpkin speed 5 for 4 secs
Add 20g oil sauté varoma speed 1 for 3 minutes or until bubbling
add milk
And remaining ingredients as listed in order
knead for 2 min on interval setting after 1min 30sec add sunflower kernels
Leave in an oiled covered bowl to double in size.
Knock it down and shape it into the loaf shape of your choice (I made a free form loaf )
Wait for it to double in size and and cook it at 220 fan forced for 5 minutes then reduce oven to 180 for 20-25 minutes. Always test your loaf by tapping the bottom of the loaf. It should sound hollow.

The reason I started off at 220 is because I was cooking other loaves in the oven at 220 before this loaf.

Forgot to add it is quite a sticky dough and I had to use the spatula and my fingers to get the last of the dough out.
It was proclaimed as the most delicious pumpkin bread ever by 4yr old DS  :D ;D Nice to feel appreciated

I sent this as the recipe for my most recent newsletter.

The sauce is very sweet (a lot of sugar!!) I did have some left over.

The sponge is fantastic, really easy to make and very light. it would more than likely work with jam and cream in it too.

Chit Chat / Opinions on pumpkin bread method please

Ok so I am trying to replicate a pumpkin bread from my local bakery. I was going to chop the pumpkin speed 5 and then sauté it off in either a little oil or water till soft then add bread dough ingredient and knead and then prove knead prove and cook. Any suggestions would be appreciated. The other option was to just chop finely and add to dough without cooking it at all.
 ;D of course I bought the pumpkin before starting the healthy choices thread lol

So inspired by Chelsea  ;) I thought it would be a good idea to start a thread here to encourage healthy eating choices  (not that we don't already do that with the TM anyway avoiding pre prepared foods etc)

I guess my goal this year is to be more active, to eat a little less so that I can drop a few kilos and have more energy etc and I would love everyones ideas support etc  8)

Anybody else in?

Main Dishes / Meat balls/rissoles

Name of Recipe: meat balls

number of people - 2 adults and 2 children with veg:

These are all approx as I didn't measure anything  ??? :-)) sorry.....
400g mince
One carrot
One small- medium onion
One medium potato
One large home grown yellow squash or 3 bought ones
One egg
Homemade bread crumbs
Parsley -small handful
Salt and pepper to taste

Preparation:
This is also approximate as I just chucked the bits in and chopped till they looked small  :D ;D
Chop onion speed 5-6 for 4 sec
Add carrot and potato and chop 5 sec/speed 4.
Add squash chop 4 sec/speed 4.
Add mince, egg, parsley and a good amount of bread crumbs either  :: for 1 min or mix on  :-: speed 3 until combined. If the mixture is too wet add more crumbs till the texture is right to form meat balls

Turn TM bowl upside down twist blades as per removing dough. Place TM bowl back and whizz for 1 sec on turbo or speed 10 use spatula to scrape remainder from bowl. I always make a heap of mini ones for the kids and then larger for DH and I. I didn't count them but there was approx 11 large ones and heaps(15) of baby ones

We BBQ'd them - they were really moist- I think due to the squash.

I have always put carrot and potato in my meat balls/ hamburgers but the squash just added to the flavour. You could basically put anything in with them, lentils, mushrooms, fetta etc good for extending the mince and for clearing out the crisper :)

CP - meagan these will be a regular meal in our house now. I have never had a good recipe before this and I have found that these meatballs don't fall apart. First time I made it I stuck to your recipe and the second time I added a capsicum and broccoli. It's great to be able to use up bits of vegetables. I mince my own meat and chop the vegies for 1 sec less cos I like them chunkier. Really tasty, thanks heaps Meagan.

ope2kenope - Dinner tonight was based on this recipe.  Thanks for posting the idea Meagan.  I used onion, pumpkin and zucchini with some tomato relish and a teaspoon of vegie stock concentrate as I didn't have any fresh herbs. I served them as hamburgers on fresh made bread rolls using Isi's Very Normal Bread recipe with homemade oven fries on the side.  Needless to say, DH was a very happy man tonight. It was absolutely delicious.

Chit Chat / Reusable straws for kids

Does anyone know of a type of reusable straw you can buy for kids. I don't want those ones that look like a rollercoaster just a straight one. We are going through quite a few straws and I was thinking if I could get two that could be washed that would be better.
