Nut Bars
serves quite a few as it is rich
Ingredients
1 1/2 cups of raw cashews
1 1/2 cups dates, pitted
1/2 cup almond butter
1/2 cup maple syrup
1/2 cup coconut flour
1 teaspoon vanilla essence
1 1/2 cups 60% or higher chocolate blitzed in thermomix.
1 1/2 tablespoons coconut oil
Preparation
Place cashews in bowl, and grind at speed 9 until a fine powder.
Add dates, almond butter, maple syrup, coconut flour and vanilla. Use  :: until it comes together in a sticky, gooey mess.
Press into a 20cm square tin that has been lined with paper.
Place in fridge several hours until firm.

Combine chocolate and coconut oil, speed 1, 50 degrees until melted together.
Pour over the base and refrigerate.
When cutting I found it easier to use a knife that I had put under hot water.

Must try these for DS as he is on the Paleo way; however they do sound yummy and we would eat them if he doesn't.

It is. As it is so sticky it's hard to get out of the bowl. I did my best, then used my fingers to scrape it out and ate it.

Well what else could you do Cookie, sounds fair to me.  ;D

I just need to buy dates and chocolate to make these.  Did you use Medjool dates Cookie?

I actually used dried dates.
Here it is chocolate coated before cutting.

It's on a green cutting board, hence the green tinge.

Looks lovely Cookie.  I bought the normal dates and I made the almond butter first.  The slice is now in the fridge.  Will do the choc top either late today or will leave to the morning.  The mixture tastes wonderful Cookie.   I would love to work out the calorie count somehow.   Will have to google. :D

I would also be interested in the calorie content - it sounds way too delicious to be a low calorie treat, though  :(!

It will be high in calories as it has so may nuts in it. I will try and do it on My Fitness Pal for you. It may be a while though as we are off to the car National Meet tomorrow.

No worries Cookie, whenever, no rush.  A piece now and then won't hurt, I've made this for my DH to take to work, but I've had a piece and I think it's really good.  :D

I've taken photos but Photobucket is playing up at the moment, so will try later to upload the photo.

These are so nice. The only thing different I will try next time is after milling the cashews I will remove from the bowl, add the dates and press Turbo once or twice just to chop slightly before adding the rest of the stuff in.  So nice and all natural, even made the almond butter.  Thanks Cookie.  :D

I cut into 25 small squares.  Will definitely make again.

Wow JulieO they look amazing. I think without the chocolate they wouldn't be too bad for you in smaler quantities, with the nuts they while high in calories they would be high in good fats and quite a good pick me up after exercise. I might look at making some into small balls to have as a pick me up.

Wonder, I think rolling into small balls would be a great idea and you could dip some into the melted chocolate if you like (I used 70%). 

It's like anything, if only having one or two small pieces it won't hurt at all.  I got 25 squares out of the 20cm tin, so yes,  only small but still a perfect size to have with a coffee.  They taste wonderful.  I just had to confirm this with my coffee this morning.  ;D

Boo this is what I did, so easy and nothing else added.  It makes about 2-3 tbs more than is needed.  :D

Almond butter – will make a bit more than needed in the recipe.
200g raw almonds

Place the nuts in the TM bowl and grind 1 min/speed 7.

Scrape down bowl and repeat a few times, allowing 30 secs between grinds until desired smoothness.

I made my almond butter they same way JulieO. I love the idea of rolling them into balls. I found that the 70% chocolate isn't really sweet! but of course has the fat.

Planning on making these this weekend.  I think I will change the method slightly, though, and grind the cashews and set them aside first, then make the almond butter and carry on from there (maybe using slightly less than 200g, perhaps 180g?, of almonds so that I have the correct quantity of butter at the end).

Cuilidh, I think about 2-3 tbs but don't hold me to that, as once I'd measured off how much I needed for the recipe, what was left over was sampled now and then as I was cooking  :-)) Yummy!  ;D

Use the 180g, I'm sure it will be enough but even if it's not, it won't be too far off.  It won't matter too much, just make a note to try 190 next time.  :D

Made today and turned into balls. Some I rolled in coconut and the others I dipped in dark chocolate. Very lovely thanks cookie but not sure which ones I like best.

Yours look much better then mine, Kimmy.  Did you make your own almond butter?  I did and used about 190 gm of almonds and ended up with quite a bit of butter left over, so, for those making the butter I would guess at perhaps 140 gm of almonds (having said that, I believe my scales do not weigh true, but I think you would be safe with 140 gm).

I also used medjool dates and made the mistake of not pre-chopping them before adding them to the jug, my poor TMX struggled bravely, so I had to rescue it in the end and just poured everything into the tray but it was fine ... a bit chunky, but fine.  The end product tasted lovely, perhaps don't look nearly as well as everyone else's, but they are very nice nonetheless.

Yes I made my own almond butter using Julie's method and weighed half a cup which was around 120g.......I ate the rest 😁 my Tmx struggled too. Have noted to chop medjool dates with cashews next time.
