Jams and Chutneys / Rhubarb and Cranberry Chutney

Have a glut of rhubarb at the moment and have been freezing. This is a great recipe, which I finally made in the TMX. Usually do on the stove but it worked well.  If you like it chunkier don't cut the apple up in TMX but just cube and add.


3 apples peeled, cored and quartered
Zest from one lemon
2 tspns mild curry powder (I make mine minus chile so I can add fresh to dishes as necessary)
2 small red chiles (or to taste)
A thumb sized  piece of peeled fresh ginger
2 small brown onions, peeled and  quartered
2 tspns salt
500 grams rhubarb cut into roughly 1 inch slices. (Mine was frozen)
170 grams dried cranberries
2 cups apple cider vinegar
2 cups brown sugar

Place everything except the cranberries and rhubarb into TMX and chop at speed 5 til looks roughly chopped (sorry didn't think of timing this).

Add rhubarb and cranberries and cook on varoma reverse stir or speed 1 for 30 minutes with the basket over lid to allow steam out and prevent splashing.

I started on stir speed and changed to speed 1 just in case it was catching, which it didn't.
You may need a shorter cooking time using fresh rhubarb.  This was my first try and just decided on 30 mins and ignored it till time was up.
The ingredients, once chopped and with the added rhubarb and cranberries just fit at the maximum level of the jug.
Was lovely with blue cheese :)

Sorry if this has already been introduced but just joined this website this morning.  Have added all my cookbooks and magazines and it is great.  American site but most of our Australian mags are indexed and definitely most of the cookbooks we have.  Great for searching for recipes in books and mags you already own.  Check it out.

Just watched Tenina's test kitchen video after noticing on FB. Was absolutely fantastic. What a great video class!  No wasting time just straight info and right into it. She made Pecan DacquOise with orange chocolate cream.  Hope we see a lot more of these :)

Chit Chat / Are there any backyard veggie gardeners here?

We are being very serious about our veggie patch and getting it ready for spring. we have a cage over the whole thing to keep out the pesky possums. 

A few weeks ago we visited the Dromana diggers club and there was so much winter veg doing brilliantly - very inspiring. What are your veggie patches doing at the moment and what do you usually pant out?  We have some old apple crates full of soil and plants at the back of our office property and have to say there are some really good carrots happening there!

Ive bought DH a cheese making kit for Christmas - he's always saying he would like to have a go. Anyway, bought from a place someone here mentioned in passing in another thread. I bought the hard cheese making kit and a cheese press. Then found out I need a double boiler and probably a wine fridge to keep the temp just right for maturation.....  Started me wondering if I do need the double boiler..... Wonder if my TMX could do the gently heating part? Anyone know?

Chit Chat / What things have you bought because of Thermie?

Just interested. After my purchase I was whiz zing up so much we had to go get an extra freezer, then I had to have a second bowl and now a dehydrator to make my own savory seasonings in Thermie plus dried tomatoes because we all love the capsicum tomato dip, which requires sundried tomatoes. Bought sun dried are in questionable oils IMHO!  That's not even including the bread tins, recipe books, mags and all sorts of items I've not remembered.......  On the plus side - my dh says that our outgoing rubbish has gone down by more than half because we are not buying prepackaged and my weekly shopping bill is around $100 less!  Havent bought bread in the nearly 4 months I've been an owner.  Oh and it's such a lot of fun playing with these things. :)

Introduce Yourself / New TMX owner from Melbourne

Hi all. Have enjoyed checking out the forum and looking at the great recipes. I had my demonstration night and my TMX delivered last Thursday night and since then have used my new machine so much. Bread, pasta dough, veggie stock paste, sorbet, sorbet, sorbet, dips, pastes, lemon butter, cheese spread, soups, rice ...... and I have been delighted!  This Friday we are off to Vic market to stock up on base ingredients and I'm going to have to get a second freezer because I am so inspired by being able to make practically anything from scratch. How do you all store your flours, grains, nuts etc and where is best for this sort of shopping?
