This is an absolute winner. The dressing is delicious. Hungriest teenager wasn't home tonight and 3 of us still managed to clean the whole lot up :-[ :-[
Fabulous recipe Tenina - Thank you

That's good, it's on my list for this week. ;D

Fabulous recipe Tenina - Thank you
You ARE a very happy Jan…thanks for the great review. The books are back in stock in the morning we hope (Monday Dec 12th) so hopefully we’ll be sold out again in a flash as people stock up for Chrissy!
-
Thanks Jan. Going on this weeks menu plan.

I agree with VHJ. This recipe is a winner. Was feeling very delicate and couldn't be bothered shredding cabbage and julienning carrots . . . that's what I have a tmx for! So I whacked that in the tmx with some mint leaves as per EDC coleslaw. End result might not have been quite so pretty, but with chicken piled high and the peanuts too, the dish still looked very attractive.
Loved the dressing. Will use it for my thai beef salad too. Loved the method of cooking the chicken in the basket then draining and chopping on reverse. Have sometimes had trouble with poached chicken being dry and then there was no need to shred it.
5/5 from me!
-
Ok, this sounds delicious, but I have no idea where to find this recipe.
Please help! :)
-
Jen, it is on page 19 of Dinner Spinners - Tenina's first book. You will find details of how to purchase it on this (http://www.forumthermomix.com/index.php?topic=7768.0) link.

Yay!!
Thank you for the super fast reply.
I bought the book & can't wait for it to arrive.
What a cool idea. :)

Hi Jen71
Judydawn is too quick for me. I just got the book delivered on Friday, this was my first effort, but will be trying more after getting off to such a good start!

Lellyj have you started your holidays ;D
-
Hi Uni . . . finish on Thursday, so the end is in sight! Have been so busy, haven't been cooking much so looking forward to having more time.
-
We had this last night. I honestly didn't think the family would like it. But it got rave reviews. Really very nice.
-
DD and I made this tonight (after I had to ask her if I could look at her iPod in Woollies today ...I got the :-)) :-)) :-)) and I had to remind her that I paid for the app! )
Anyway... YUMMO! Even the non-salad eater (hubby) loved it.
Sadly - no leftovers... :(

This is what I LOVE to hear…you go mummy of an iphone…hahahaha

This is my absolute favourite recipe at the moment . . . have made it 4 times now and only got Dinner Spinner just before Christmas!
-
This was my first Dinner Spinner recipe. It was really easy and quite tasty. DW doesn't like chilli so I only put half a medium one in the dressing and it was enough. I would happily make this again.
I purchased the Dinner Spinner app and found it really easy to use. It was very helpful when I was in the supermarket and needed to check a couple of ingredients.
-
This was delicious - made it last night. 2 more Dinner Spinners arrived in post yesterday after I ordered for friends who had been drooling over my copy - also purchased app as I needed Chilli Pork recipe before yesterday's delivery. Great to have on hand when back at school (which is next Wed - eeeekkk!!!!!) wondering about evening meal - thanks Tenina for making life a little simpler. :) :)
-
Next Wednesday--seriously Johnro?! We were at school til Dec 22, but don't go back til Feb 1st. Good luck for 2012--youre right, its a great recipe, my current fave when you need to take a salad.
Have a great term 1 (sounds scary to me, my head is not there yet!)

Blimey Robyn that six weeks flew by :o

Denise there have been many more descriptors used lately when the thought of commencing the school year is discussed and blimey has not surfaced :D :D Lellyj you deserve the break until Feb 1 given you had to work up until Christmas - we finished Dec 9 :) :)
-
Robyn by yhe dates you have mentioned I am guessing that you are a Registrar/Business Manager or School Officer in a state Gvt school.
Is this correct? I work in DoE based in the wheatbelt region.

There is nothing run of the mill about any teachers. My wife is a Primary school deputy principal and DD1 is a Primary teacher. I couldn't read your signature at the bottom of your psot very well. I read Rockhampton as Rocckingham. WA teachers have another week loger off than you so I thought you must have been support staff.
I hope that you have a good first term.

DDand DS went to rockingham public school for a few years. i think my grand nephews and nieces go there now. wow i do say old :-))
-
Going to make this soon, did everyone use breast or thigh fillets? Approx how many grams? Thanks
-
........did everyone use breast or thigh fillets? Approx how many grams? Thanks
.....used a double breast fillet Yvette with the weight being 760g - found that I had to cook longer and turned the chicken in the steamimg basket at the end of initial cooking time - you will so enjoy this :) :) :)
-
I especially love the dressing. I'm going to use it on a chicken & mango salad that's planned for this week. :)
-
I used the left over chicken and dressing from when I made this the other day to make rice paper spring rolls for lunch. I shredded the cabbage and julienned some carrot and leb cucumber. I used the dressing as a dipping sauce. This worked really well. It would probably work better for someone who can roll up spring rolls so they don't fall apart when you eat them.
I have never been any good at rolling things like this. I always over fill soft shell tacos and burritos so they fall apart too. When I smoked as a young man I always had to buy tailor mades, I could neve smoke rollies.
-
Thanks Robyn will let you know :)
-
I used chicken breast too, which is good for this recipe as it shreds easily. Everytime I have made it I have had quite big chicken breasts (don't want to boast!) and they have required a bit of a stir and a couple more minutes cooking time.
LOVE the idea of ricepaper rolls, Dashingden, will try that too.

I have the same problem Dashingden - with food not cigarettes. ;D
-
I made the dressing the otherr day and we have been using it on mixed leaves, yum
H :)
-
The reviews on this one have been great - I have 1/2 a roast chicken left over from tonight so will make this tomorrow using that.
-
On the menu again tonight with unexpected visitors for dinner - 800g chicken cooked varoma 18mins added rice stick noodles (soaked in boiling water while chicken cooked), bean sprouts and sugar snap peas and doubled the dressing - thumbs up all around :) :)
-
What a great way to tweak and expand this recipe Johnro. I will have to keep this in mind for the future.
-
I made 1/4 of this recipe for the 2 of us using leftover BBQ chicken. I used Chinese cabbage, sambal oelek instead of fresh chillies and frozen basil leaves and it was lovely. Next time I would make sure I had all the ingredients to make 1/2 quantity of the dressing as we could have done with a little more. I didn't think DH would like it and waited until he had finished before asking - surprisingly he did. So light and with the chicken on hand, very quick to put together. Good one Tenina.
-
I'm looking forward to trying this when our weather gets a bit warmer....
-
The dressing is such a standout I made this salad the other day for a vegetarian, obviously omitting the chicken and it still is lovely. I have also made it using cooked prawns by once again leaving out the chicken and just putting it together with the cooked prawns at the end. I can't rave enough about this recipe. It is just so versatile. I think over summer so far I have made this salad at least 12 times now as it is so quick ie great to make whenever unexpected guests drop in and it feeds a crowd really nicely.
-
Made this for dinner last night, and it tasted great. Should have read the recipe a little more as there were only the two of us and we had shredded cabbage everywhere. I also found it quite difficult to eat (put way too much on our plates), next time I think I will mix it together first. I'm having the leftovers for lunch today so hoping it still tastes as good.
-
Have to agree with everyone else here - this is fantastic! Made it for the first time last night amid many compliments and exclamations! I accidentally put a little more fish sauce in the dressing than was called for and found we didn't have the chilli - so we used a little chilli powder - but it still didn't matter. We didn't have exactly what was called for in the salad but that didn't seem to matter either! The dressing covers all bases! Daughter commented, "This is a great way to cook chicken!" Even SWHL commented after dinner, "Wow, the kitchen smells great!" All in all, an absolutely first rate dish and about to become a very firm family favourite!
-
Made this for a picnic yesterday and have to agree - it's a winner! Love the way the TMX shreds the chicken, will have to use that method for other recipes as well.
Does anyone know how long the dressing would last? Would be good to make double and keep some in the fridge for a quick salad.

YAY, we love this too….Wonder, how did it taste the next day?? I think it improves over a couple of days.
And as for keeping the dressing, it will keep for 3 weeks in the fridge, you just need to whiz it up again to recombine as it will separate.
Thanks for all the positives guys…
;D ;D ;D
-
Great to hear the dressing keeps for 3 weeks, we love the dressing :)
H :)
-
Yes so do we here. Nice to know we can make up a batch and it will keep. Thanks Tenina, hope you enjoyed your cruise.
-
Making this for the first time today and just wondering what chicken fillets everyone used? Breast, thigh?
-
It was fine the next day, the cabbage had gone a little softer but still a good flavour.
-
I used breast fillets but cooked them for about 3 minutes longer than the recipe stated as the centre of some of the pieces was still raw after the cooking time.
-

Thanks JD, I did, once I got over the fact I was stuck on there no matter what! Bit claustro the first day, but then it forced me to relax, which I really really needed. Struggling to get on with it now though!!
-
Just wanted to ask does the sauce need refrigeration if I want to have it tomorrow?
-
It pays to keep all dressings in the fridge Tasty.
-
Thanks JD.
Well I made this today and it is delicious! I wasn't too sure if I would like it as it's Asian but it definitely is yummy!
It's a pretty quick and simple recipe to make too. I liked how you cook the chicken in the simmering basket (I ended up using chicken thigh fillets and cooked for 3 extra minutes as someone suggested) and even more so, I love how the TMX shreds the chicken!
Like Lelly, I am lazy and next time will chop the peanuts and the salad ingredients in the tmx first before rinsing out to start the recipe.
Certainly a dinner spinner winner.
Here is a photo (I was a bit lazy with cutting salad properly and my peanuts were unsalted):

wow tasty, that looks lovely. your photo has such fantastic clarity you must have a "good" camera?
-
No it's very much an average camera. I have found that if I can get natural light on the food, the photos turn out a LOT better.
Oh and I just remembered, I added a lot more chicken than it says and will probably increase once again and I deseeded the chilli.
-
Looks great Tasty!
-
Lovely photo, great looking salad Tasty.

Congratulations on the lovely photo Tasty.

Made the shredded chicken salad last might. Used a different dressing for the kids as it was quite fishy (with 50g fish sauce) but lovely. We even added a little balsamic to it.
Had left over turkey from Xmas so used that. Perfect. Kids very happy to add this to a dinner menu option. Yay love adding ones the kids love that are a bit different.

Absolutely loved the chicken salad with Vietnamese dressing!
The flavours of the dressing left a lovely after-taste. Must admit I only added a few drops of fish sauce as I'm not a big fan, but it turned out perfect. This would make a lovely salad even without the chicken.
I can see me making this one often.

Made the Vietnamese chicken salad, changed the dressing a bit, added coriander and sweet chilli sauce, no chilli, and wanted to use up the coriander, didnt add the sugar, less lemon juice and it was yummy. Trying to use up food before we go away tomorrow.

Tenina, I just made the Vietnamese chicken salad today. Absolutely divine! The dressing is delicious and this is a fantastic way to make a small amount of chicken go a long way! Definitely will keep this one on my regular repertoire.

I just made the Vietnamese Chicken salad too. YUM!!!
Though......I did have 3 chicken breasts in the fridge, and knew I wouldn't be using 1 if i left it, so I cooked the 3....for 2 adults! Well....lets just say we have a lot of shredded chicken for lunch tomorrow!!!

Tenina, this recipe is just lovely. It will become a fav with us as well. Perfect for a warm day like today in Perth, and also, all the ingredients are things I would have in my cupboard/fridge/garden ready at hand. 10 out of 10
-
I made this again tonight but instead of using shredded chicken I steamed a couple of salmon fillets. I felt this worked well and I would do it again. I really like the dressing.
-
Did you serve it whole on top of the salad or did you cut it into pieces Dashingden? I can see that it would work either way.
-
JD I served it whole on top of the salad for dinner last night and then had it broken up cold with the salad for lunch today. It worked well both ways.
-
I like the idea of using salmon too, thanks. :D
-
Made this a few weeks ago as the first of my dinner spinner recipes and like everyone else we all enjoyed it. Such a quick easy salad I'm sure it will become a much used recipe. Thanks Tenina.
-
This is a superb recipe. I love the dressing.
I added vermicelli noodles and julienned snow peas and cucumber. It was delicious the next day too.
I make it in one big dish and layer everything. then everyone just helps themselves using salad servers.
I'd like to try it with both prawns and salmon as I think it would be excellent.
-
Yum to all of those suggestions…someone told me at the class last week she seared some scallops and put them on top of the salad…awesome…
OH, and BTW, keep meaning to mention that we gave away gorgeous little chocolate lip balms in our goodie bag from http://skinflint.com.au (http://skinflint.com.au) and they went down a treat….thanks MeganJane!
;D ;D ;D
-
Yes thanks MJ.
-
Glad you liked them!
I've made this yummy salad again. This time tweaking the dressing for a Thai Beef Salad. I didn't have the Savoy cabbage, so used regular.
Vermicilli on the base, then cabbage, carrots, cucumber, snow peas, peanuts (cashews would have been better with beef). Then BBQ'd Scotch fillet, sliced on top with dressing drizzled over.
Dressing was essentially the same with the addition of Lemongrass and Kaffir lime leaves. Scrumptious!! Ate the rest the next day and the next day after that!
-
Ok I'm just mildly obsessed with this salad...I've lost count how many times I've made it....but I keep making it again and again as a side for when we have visitiors. I've made it the night before and kept it undressed and taken it on picnics, dressing just before eating. And it's my new favourite "getting home late" dinner...what's so great about it is that you can substitute whatever you have in the fridge (within reason) I had some fresh bamboo shoot and some carb-free noodles from a recent trip to my fav asian supermarket...thanks Tenina just awesome :-*
-
Hot day in London today and this was perfect way to use up left over roast chicken. Also added some sliced nectarines and this was a delicious addition.
-
My DH and I LOVE this recipe! So easy and so tasty, thanks Tenina!! ;D
5/5 from us!!
-
Thanks for all the great feedback guys...as a recipe developer you can't do any better than to hear that people are coming back to a recipe over and over again...I even still cook this, and I don't really cook many things more than once...
Glad to be of service! ;D ;D ;D
-
got the recipe from the iphone app and tried yesterday.
We loved it, the dressing was soooo good. and the salad very fresh. The best part is I have left overs for lunch today :-)
and good idea from this post to use the dressing for thai beef salad, i will try that.
-
Made this with beef fillet recently (roasted beef in oven) so still pink in the middle and made the rest of this recipe as per Dinner Spinner. So versatile! I have done this many times now with the the shredded chicken, prawns, beef, you name it! Always impresses my guests and it is the easiest dish on my TM repertoire to make!
-
I made this again last week. It's my favourite dressing by far, and I love the way the chicken shreds so evenly.
There's always some leftovers and I think it's even better the next day.
-
We had this for dinner again last night. Everyone still loves it. I actually grill my chicken breast and just cut it up to put over the salad. I tend to fiddle with the quantities a bit to suit the 3 of us. I make the full quantity of dressing as it is nice to keep tossing in the salad as it drains through.

Yum, thanks for adding your dinner, Cookie! I was inspired and just made it for our tea too.
-
I hope you enjoy it. I just had the leftovers for lunch.
