It could easily have been me bedlam actually it probably was lol ... I may have overcooked it as i split it but it wasnt dry but quite crumbly, just kept falling into bits and not the strongest flavour but thats me and my attempt..out of all the cakes ive made unfortunately its just not up there for me and im Not sure i would make it again but rather try another

I also made this carrot cake for work's fundraising cake day.  I kept one for myself and took the other as I was also taking the Pistachio and Lemon cupcakes.  Mine were both lovely and moist and once again, so simple.  I used a cream cheese icing for both the carrot cake and the cupcakes.  Great recipe.

I have some Philadelphia lemon frosting that I picked up on sale today. Had to make a cake to suit. The batter tasted great. The spice and crunch of raw carrot made it feel like there was crystalised ginger in there. Looking forward to the cooked result.

Fruit cakes are my downfall. I would prefer to eat them raw than cooked.

I've made this cake a few times but not for a long while. I'm not much of a cake eater but enjoy a piece of carrot cake every now and again and remembered this one freezes well. I think I may have overcooked it slightly but it still tastes lovely and I'll cut and freeze so I can enjoy a small piece each day. I used pecans and also added some sultanas.

Thanks Kimmy, sorry should have read the recipe better as I can see that this has been mentioned already ;)
Will give it a try and let you know, planning to halve and bake in a lamington tray..
