ANOTHER batch of KFC powder.   I multiply the recipe by 8 and then put the appropriate amounts in small plastic containers,  marked 1 and2,  including instructions,  all in a plastic zip bag.  I think it is the novelty factor that everyone likes.  Fruit cake a bit sticky so making chocolate covered balls from it,  to look like xmas puds.

Amanda,  you might have to do just 4 at a time in the bottom steamer.   This is how I did my small Xmas Puds.  Very successful, and with 800mls. of water ,  didn't need topping up in the hour they took to cook.

Jams and Chutneys / Re: Anyone successfully made a nice jam?
« on: December 12, 2010, 08:50:10 pm »
Made Mango and Lime, Lime and Carrot and Lemon.   The Lime set up too firm so I tipped some water in for a better consistency.   Next time I will add some apple pulp to the lime to balance the flavors a bit.

Tips and Tricks / Re: Butter tips please
« on: December 05, 2010, 09:22:16 pm »
I make 2x600mls. in the TMX and use thickened cream.  I wash it twice and find the best method is to tip the washed mix into a chux lined sieve.   I freeze in plastic containers in freezer.  I freeze the butter milk for the KFC recipe.   I add 100g of rice bran oil at the end to this amount of cream.  I have costed it out and you end up with the butter milk for free.

Roxy, sorry I missed your inquiry  about the pineapple jam.   I just popped pealed and cored pineapple into the TMX bowl and zapped it a bit,  so that there were small bits.   I then put  to 3/4 of the amount of pineapple in volume ,  of sugar in and zapped on reverse to incorporate.   The cooked for about 30 mins. until set.   I think I probably added 1/2 a packet of jamsetta.   DH just loves this jam.   Sorry I am not more precise,  but I just make jam from what ever and fiddle with it until it is ok.

So much good info . here.   I buy Laucke flour in 10 k.  bags for $20 from Safeways of Coles.  Cost $1 to make 8 rolls or a large loaf.   Yeast is included.  I also use 1/2 and 1/2 bread flour and cake flour in biscuits.

Desserts / Persian Fruit Salad
« on: December 05, 2010, 06:54:12 am »

This Fruit Salad is made with dried fruit, soaked in an apricot 'sauce', flavored with both Orange blossom and Rose blossom waters. It can be stored in the fridge for up to 2 weeks. It can be used as a dessert or on breakfast cereal. The Orange and Rose Blossom waters can be purchased from Middle Eastern shops or Turkish shops.

100g Dried Apricots.
250g cold water
450g mixed dried fruit, I used apricots, peaches, pears, figs , plus.
10/15 prunes
Further 1 ltr. cold water
2 Tablespoons of both Orange and Rose Blossom water ,(not essence)
!/2 cup of almonds

Zap dried apricots in TMX ,speed 7 for 7 seconds.
Add 250mls of cold water and cook for 10 mins. at 100o, speed 1.
Zap 7 seconds on speed 7 or until a thick sauce is formed.
Add 1 litre of cold water, dried fruit and prunes, Rose and Orange waters.
Mix, reverse 10 seconds, on speed 5,
Pour into a container and keep for at least 12 hours.
Stir in almonds after soaking period.

Don't be tempted to sweeten until after the soaking period.

10 serves, can be served with cream, yogurt or plain.

Julieo,  than sounds perfect.   This is how I cook them,   However resting in the fridge will not do them any harm.
