Main Dishes / Creamed Truffled Eggs

Name of Recipe: Creamed Truffled Eggs
Number of People:
Ingredients:

20g fresh truffle
100g soft unsalted butter
4 whole eggs
6 egg yolks
salt and freshly ground white pepper

Preparation:

Start by placing the truffle in the TM bowl. Chop finely for 10 seconds on speed 7.

Insert butterfly into the TM bowl. Add 30g of the butter and melt for 2 minutes on 50ºC at speed 1.

Add the eggs, yolks and some salt and mix for 30 seconds on speed 3. Cook the eggs for 25 minutes at 80ºC on speed soft. You should have very small particles developing that are moist but bound together. You may need to lower the temperature to 70ºC if they are cooking too quickly, so watch through the vent hole in the lid.

Once the eggs have developed the right consistency then set the machine for 3 minutes at 70ºC on speed soft and gradually add small pieces of butter through the lid, allowing time for the pieces to melt and amalgamate.

Adjust seasoning with salt and white pepper. Serve with love and some extra truffle slices.

Name of Recipe: Fruity Dream

Ingredients:

60g Sugar
300g Frozen Fruit of your choice, chopped and separated before freezing when using larger fruits like melons, bananas, oranges etc
1 Egg White

Preparation:

Place sugar into TM bowl and pulverise for 20 seconds on speed 9.

Add fruits and chop for 10 seconds on speed 8. Scrape down sides of bowl with spatula.

Insert Butterfly and add egg white and mix for 45 seconds on speed 4 or until you have a soft consistency. This is a soft serve dessert and should be served immediately.

Thermomixer - I have successfully frozen this in ice cube trays & then blitzed on speed 10 to break up, before inserting butterfly and adding more egg white. The frozen blueberries work really well, but the raspberries & mixed berries are not so good - little pips everywhere.

cathy79 - Made this the other day with strawberries.  It is divine!  At only 80c a punnet, I made big dessert bowls for 4 people for about $1.  It would be great served with a chocolate cake instead of ice-cream or cream.

cooking-good-looking - Have I read somewhere that you can substitute the egg whites for this with coconut milk? Froze some coconut milk ice-blocks last night- hoping you can as i am cooking for someone tonight that cant have raw egg... help!!?

Uni - on my leaflet the alternative to egg white is 50g cream/coconut cream.

Tasty - Made this the other week when it was hot here in Perth. It was easy, light and refreshing. I used mainly strawberries and blueberries.

Nikkit - I use frozen mango. I don't add any sugar as the mangos are sweet enough.

Name of Recipe: Sorbet

Ingredients:

300g Fruit in season (oranges, lemons, strawberries, mangos, melons – any fruit of your choice)
700g Ice Cubes
150g Sugar
1 Egg White


Preparation:

 Place sugar into TM bowl and mix for 10 seconds on speed 9.

Add the fruit followed by the egg white and the ice. Slowly turn the speed dial to speed 10.

Use the spatula to assist in the incorporation of the fruit with the ice.

This takes approximately 1 minute.

Seafood and Fish / Tuna Bake

Tuna Bake:
Number of peole:4

Ingredientss:

2 cans of Tuna
Tomato Sauce (360gr)
1 onion
Olive oil
1 packet of grated  mozzarela cheese
6 Fish Sticks (crab sticks)
Salt, pepper, garlic powder e oregano (add to taste)
Mashed Potatoes or Rice


Preparation:

Chop the onion, then add the tomato sauce for 10 secs., speed 5.
When all nicely chopped, heat and mix for 6 minutos, speed 2, temp. 90º.
When done, add a sprinkle of olive oil, then add the tuna, fish sticks (chopped) and finally the salt, pepper, garlic powder and oregano. Programme for 8 mins, speed 2, temp. Varoma. 
Whilst cooking, take the lid off and slowly add the grated mozzarela. If, by any chance the sauce seems a little to liquid, just take the top off and stand for 6 minutes.

Then when done, pour into an oven dish and add mashed pototoes or cooked rice on the top.
