Thermomix Recipes for TM5 and TM31 => Bread => Topic started by: nonomix on April 03, 2012, 07:05:40 am

Dough:
225g water
500g bread flour
1 paquet of instant yeast
10g sugar
40g oil (use cooking olive or any bland oil)
1 egg
1 tsp salt
Water bath:
1L water
1 tsp salt
40g baking soda
Finish:
1 egg
Sesame seeds, poppy seeds…
To make the dough, put the water in the Thermomic bowl and heat 37C for 2 min, speed 2
Add the remaining dough ingredients, set the timer to 2min 30, lock the bowl and press the Kneading button
Tip out the dough in a container and let to rest at room temperature for 35 min to an hour
Preheat the oven to 190C (180C for fan ovens)
Put the dough on a floured surface and flatten it with the palm of your hand down to 5cm thick
Use a pastry cutter to cut out into buns or divide the dough in any shape you like
Prepare the water bath: boil the water with the salt and baking soda
Using a slotted spoon, briefly dip each bun into the boiling water and out again. Set aside on a baking tray lined with baking parchment or silicone sheet
Brush the beaten egg (or egg yolk for a darker finish) on each bun
Sprinkle with the seeds of your choice, indent the top of the buns in 2 or 3 places with a sharp knife and put in the oven for 15 min (check often as it can brown quite quickly)

Fundj, I hope you had success making these, I made them for my guests on Sunday and they were amazed how good they were. I got the recipe from a French lady who lives in the East of France (Alsace). Not sure if it's a speciality of the region but she makes them a lot.
Cookie, I put the whole sachet, i.e. 7g of Fast Instant yeast. Hope that helps!

yes CC still in pain and unwell off to the doctors agian 2day,the scan showed inflammation in the lungs

I have just printed this recipe out to try today. What does 'indent the top of the buns with a sharp knife' mean. Does it mean stab them or slash them please? Great looking batch of rolls Uni, hope you get the treatment you need - we all want you to be well again. :-* :-* :-* :-* :-*
Another question, how many rolls does this make - are they dinner sized or lunch sized, I suspect dinner size with just 15 minutes of cooking time. Uni, how many did you make please and what did you mean by 'the one resting for 15 minutes cooked better'. Do you mean you only let the dough rise for 15 minutes or did you rest them for an extra 15 minutes after you had dipped them in the water bath?

JD i got 13 rolls the size is inbetween a dinner roll and lunch roll . while the 1st bacth where cooking the 2nd was resting

Thanks Uni, 1 got 12 before I read your reply and I did rest them for 15 minutes before baking as I presumed that is what you meant. I didn't 'indent' them, will wait to find out what that actually means. Not long to go, they are looking good though.

fab, rolls. Just dumped all in TMX, kneaded for 4 mins. Prooved in bowl. Flattened on mat , cut with plastic scraper, dipped in hot water, brushed with egg wash, covered tray for 15 mins,jabbed with knife, into oven , turned 1/2 way through. perfect. photo coming.

Well mine turned out really well too and we both enjoyed them - not to sweet for us Uni ;)
I put them back into the oven on a wire rack for a few minutes as their bottoms were still soft after 15 minutes.
Thanks for sharing with us nonomix. I'd love to know the purpose of the water bath step - I am always curious as to why I am doing things out of the ordinary in my cooking.

Amy, i think they would, but would be a little heavier.
We had them for lunch and they were very soft, Almost a little cake like. The egg adds to this.
Uni, I reduced the sugar as we don't like sweet rolls. I also sprinkled some with salt flakes.
What I was interested in was the process of dunking in the water. Love this as it gives a very silky finish. Think you could do this with the NO Fuss recipe. Will try.

Fundj, you can keep them in a tupperware box or freeze them!
Indent means make a slight slashing on the top with a knife or I use the tip of the cissors, works well too!!
The size is up to you, you can use as small or big pastry cutter as you like to cut them! Hope it helps!

Not sure about the science behind the water bath but I noticed it makes them plumper after they are dipped. Also, that might be why you don't need to rest them again before baking as they seem to rise during the cooking time so they are never too dense. I guess every oven is different, that's why some of you might have had to cook them a bit longer.

Made the rolls this morning and am pleased with how they turned out. I did reduce the sugar by half and also added 1 tsp of improver. Reminds me of when I make bagels (with the water bath). Thanks for a great recipe nonomix. :D

And julie0 I have to add one who makes food look so professional! What I mean is, your rolls are so round! I made maddy's choc hot cross rolls and the choc chip kept melting in my hand when I tried to mark it a ball and it all looked rustic!!!! Tasted yummy though!

Courton, thankyou. Did you use chocolate chips as they should still keep their shape. I had the same problem a couple of years ago when I used chopped up chocolate. Just a thought. ;D

I made these yesterday to have with soup for dinner. They are delicious. We all loved them.
When I cut them I just did it haphazardly from the dough and got all sorts of shapes. I let them rise for about 15 minutes as cutting them had pushed the edges down. I should have used floss.

Cookie, they look pretty good to me. Do you turn your tray around 1/2 way through? When I make random sized rolls, I put the smallest ones in the center of the tray.

Cookie, they look fantastic! Try without letting them rise the next time as I never do and they are still nicely raised through the water bath and the cooking (that means it could save you 15 minutes ;))
I love the different shapes and sizes. Next time I have a cocktail style dinner, I'll make them really small to serve as canapés...

I made these this morning and they are quite simply stunning. I changed nothing with the recipe. It is a true winner and will be a regular in our house. Filled with avocado dip made with the unwashed bowl after homemade mayonnaise (thanks for the idea judydawn), cheese and salad. Yum!

The boiling bath is similar to what you do for laugenbrotchen here, likewise pretzels and so on.

Just finished eating them, we made 11 and had one left over. Everyone liked them (4 people having 2 each). Highly recommended and worked well with the soup

Putting them in boiling water first makes them sort of like a bagel consistency I would guess.
