Name of Recipe: Potato & Corn soup
Number of People:4 serves
Ingredients:
10g butter
150g onion, quartered (1 medium)
600 - 700g small potatoes, peeled and cut into quarters
500g chicken stock
1.5 cups corn kernels, fresh, frozen or canned
1/2 cup light cooking cream (you can use evaporated skim milk in place of the cream & the skim milk)
1/2 cup skim milk
S & P to taste
1 heaped tablespoon chopped chives or parsley (opt)
Preparation:
Place onion and margarine in TMX bowl, chop 2 seconds/ speed 5.
Cook 5 minutes 100o/speed 1.
Add potatoes and stock & cook 25 minutes/100o/speed 1/reverse.
Add corn, cream, milk, S & P and chives.
Cook 5 minutes/90o/speed 1/reverse.
Leave as is if you don't want a smooth soup. For a pureed soup, slowly bring speed up to 5 and blitz the soup for 10 seconds. It will thicken slightly more once cold. If too thick, add some more chicken stock.

Thanks for another recipe. You really are on a roll. I sometimes use reverse with these types of soup to reduce the chances of it being over processed, but chopped up.

Made his today and on a cold day it was very warming. My DH kept saying lovely as he was eating ;D
I was listening to Richard Fidler talking to Michael Chamberlain and misread the instructions! But, no harm done. Used olive oil instead of margarine. I added the corn, milk and some shallots with the potatoes. The potatoes were big potatoes cut into smallish pieces. I decided I didn't need to blend it, as I liked the pieces of corn and didn't want them broken up. Added yogurt instead of cream. Very nice chowder type soup. DH gave it 4.5/5.

Thanks ElleG - this is one of my very early conversions. Funny how I used to make it a lot more often in the 'old days' than I do now with the TMX - there are so many soup recipes now that it takes me quite a while to get back to some of the early ones. Must do so though as I do remember it being rather nice.

With the cooler weather here & playing hockey Monday nights I have decided we need quick easy meals & that it will be soup night, so will add this to the menu.

Made this tonight & a winner with whole family, I'm trying soups on my 2 year old for the first time so it's great to find ones she like.

The dietician told me I have to eat 8 serves of carbs per day so that I don’t lose anymore weight so that soup fits the bill nicely Julie.

I love my carbs too much Judy. Mine go on my lunchtime sourdough and a little at dinner.
