Title: Plum and raspberry jam.

This is for karenH.

First you have to decide to make jam not jelly. ;D  the process is quite different. With jelly,  the fruit that has been cooked with water is dripped through a jelly bag.  With most of my jams,  i push them through a course strainer. This not only removes the skin and pips but gives a nice texture to the finished jam.  It also allows you to use a mixture of fruits.  for example,  with the plum and raspberry,  you could add an apple or pear to bulk up the recipe,  The apple would also add pectin and therefore assist setting.

For quantities for the TMX, use the recipe i have posted here (http://www.forumthermomix.com/index.php?topic=2580.0) for Nectarine and Raspberry jam.  With this recipe the stones have been removed before cooking.  If you wish to leave them in,  cook the mixture and then strain through the TMX basket,  into a bowl and then tip back into the TMX,  and follow recipe. If you wish to remove most of the raspberry seeds,  push through a sieve.

If you wish to make a lot.  Make it on the stove top.

Thank you so much Chookie.  Heading to the farmers markets tomorrow to get some stone fruit, and plan to make this jam too  :-*

I made this the other day. I didn't strain the raspberry seeds out and it is beautiful. My new favourite jam. I also used frozen raspberries.

Cookie,  this is one of the most popular jams that I make and give as hostess gifts.  The birds ate all our raspberries this year so I will buy frozen ones also.  I have been asked to give a talk at the local community center on making jams pickle and such.  Will probably do it as need to give back to community.

That would be wonderful, Chookie!  Would there be a possibility of someone filming your talk? Maybe putting it on disc or YouTube ?? :)

Very yummy, straight onto  a Victoria sandwich cake and eaten on top of a hill with billy tea on a lovely walk.

Hi Chookie
Running out of plums, what about pears as well, they are falling off the tree by the dozen.
Might try plum, Pear, and rasp or what about apple? Got lots of those too!

Use your apples to make jelly and add the Raspberries to that.  I use apple as a base for most  jams instead of water.  Like you we can get plenty of Apples.    I cover them well with water, cook them until pulpy and strain through a jelly bag.  DJ , sounds like you are having a great time with the jam making. I gave my GS the last jar of Apple and Raspberry yesterday.  He loves it as I put the lot through the jelly bag so there are no pips.
