Title: Carrot Salad

Name of Recipe: Carrot Salad

Number of People: 4

Ingredients:

3 large carrots, (250 g approx.) cut into chunks
1 Tbsp fresh mint leaves
20 gm olive oil
Juice of 1 lemon
1 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp orange blossom water
2 Tbsp currants
Salt and pepper to taste


Preparation:

Place carrot and mint into the TM bowl. Chop for 5 seconds on speed 5. Check for size of pieces - they should be almost like large breadcrumbs, but not mush.

Add remaining ingredients and blend for 10 seconds on  :-: and speed 3.

Maddy - This was so quick, with nice refreshing flavours.  Served it with our BBQ. I used 300g carrots and sultanas (instead of raisins). Made earlier then chilled for flavour to  develop.

Kulsha - Thanks for this salad recipe, it was a nice change from the usual. I didn't have the orange blossom water so left it out and didn't have mint so used a bit of basil from the garden, although mint would have been nicer. Served with weber BBQ steaks, yum !! A keeper!

Does look good maddy, thanks for the photo.  Where do you buy orange blossom water?  For a 1/4 tspn, is it worth buying, must be quite strong?  Summer is coming, must keep this one in mind - certainly different.

It is quite strong Judy, little goes a long way.
You can buy it cheaply from Indian/Asian food stores.
I do have some orange blossom cakes I've had on my list to make, so will post that one shortly.
I know Julie has made orange blossom icing, it's somewhere on here I think  ???

Looking forward to the Orange Blossom cake recipe.  :) :)

It is quite strong Judy, little goes a long way.
You can buy it cheaply from Indian/Asian food stores.
I do have some orange blossom cakes I've had on my list to make, so will post that one shortly.

I always keep a bottle of orange blossom and Rose blossom water .  I use both in my Persian fruit salad.  It keeps forever and is cheap to buy.  There is also essence .  It is very strong,  I don't use. This.   My Aunty used to ice sponge cakes with Rose blossom icing.   As a child it was my fav. Cake.
