I thought I had posted this a long time ago but can't find it.  I found this in the Sunday Times checkout section, many years ago. It is my go to quick dessert when we have company.  I often double it and bake in a larger tin. Thermie can't double the pastry but so quick to make  it twice and give it a very light knead and proceed.

Almost instant Apple (or Apricot) Pie

125g Butter( must be butter not marg)chopped into manageable pieces
1 egg
3/4 cup Plain Flour
3/4 cup SR Flour
1/2 cup Sugar
( since finding vanilla paste, I add a Teaspoon of that too)

Filling
440g tin Pie apples

Throw all ingredients into Thermomix, mix on sp 4/5 until it combines, usually only 5 sec or so.
Pat a bit more than 1/2 into the base of a 24cm cake tin( I find a removable base best).
Add pie apples.
Roll out remaining pastry( I do it between 2 sheets of baking paper, then peel top one off and place the pastry over pie then peel bottom one off, as it isn't like normal pastry much softer.  My girls have made this since very young and often the top has been made of bits of pastry but it is very forgiving and comes together well when cooked). Place over apples and tuck in and pat down lightly.
Bake 180C for about 40 minutes.  It is best to make sure it is golden in colour, don't underbake.

I serve with custard or icecream.
This pie is always complimented. Often I add more apples and make it a very high pie, depending on how many I am feeding.
I always use tin apples as it is a dessert in a hurry but I am sure you could substitute if you have time,

KimmyH - Made today and loved by all. Thanks bedlam, it really is an quick easy and yummy dessert. I used fresh apples steamed in the varoma as per EDC recipe and mixed in some sugar and cinnamon. Really nice.

Lovely Kimmy, it is nice and although pastry is easy in thermie, this seems even easier. I'm glad you liked it.

I made this for dinner tonight. It's lovely. I didn't put any sugar in the pastry but sort of sprinkled some molasses sugar on the top. It looks more like choc chips!  (http://img.tapatalk.com/d/14/07/28/sujy6aqe.jpg)
The pastry is almost a biscuit type of pastry and is very nice.

I had problems with the pastry as my kitchen was very hot this afternoon :P I couldn't roll out the lid even though I was rolling it between two pieces of baking paper.It stuck.So I slapped it onto the apple :D :D
I only used one egg in the pastry as to the two listed in the ingredients and next time I will use a smaller spring form tin.Mine measured 23cm.
Not very pretty but really delicious.

Sorry Denise should have only been I egg. I have amended the recipe.
I have had that problem occasionally and put it down to different butter.  It does roll out better when colder, perhaps worth popping it in the fridge for a minute or two before rolling the top. It is forgiving though and  cooks up nicely.

I made this for dessert last night and it was a hit.  GS love it so much he had two servings and wanted a third. :P

I couldn't roll the pastry so just pressed it into the tin and then sprinkled the remainder of the pastry over the top of the apples.  It's a lovely dessert and so quick and easy to make.

I have also made this and it is a really tasty recipe.  I had trouble with the pastry lid as well CC, and just patted it in by hand.  I used the pie apples, but found them a bit mushy, so will steam apples next time.

I only used 1 egg as I thought the other was for glazing. You could always freeze the top pastry and grate it over the top.

I always press the base pastry in the tin and have perfected the top, with heaps of practice.  I lay it on top of the apples and then peel the paper off. It seems to cook up ok however you do it and tastes  yum.  I think the best thing is not to worry too much. Sorry about that stray egg!
