Bread / Fruit loaf

Hi
We have a favourite coffee shop that serves a great thickly fruited bread toasted and I was wondering how to do this.
I had an idea in middle of the night for improving on my previous attempts at fruit bread making.I now use the five seed bread recipe and exchange seeds for fruit. I add about 60 gms (even a little more)each of dried apricots, sultanas, figs, raisens mixed peel and also add a generous amount of broken walnuts. The first lot I made we decided I could leave the pieces of apricots and figs in a larger size , about a third of an apricot size. At first I was worried it wouldn't rise but it does with all that weight and it is absolutely super.We slice it thickly and freeze it and it is great to take out a piece to toast for lunch or a snack. The bread is a lovely consistancy, light and so good and healthy.
I really recommend you try this ladies and guys.
By the way does anyone else play the ukulele?Leigh (my wife) and I have joined a local Ukulele Club, they are everywhere now ,ours is in North Sydney and the members are so friendly and helpful, a ukulele costs only about $30 and it is relatively easy to learn to strum a tune.The internet has lots of easy lessons available, so you don't need a teacher.
For this old guy who turned 79 on Monday 15th Aug life is so so busy. Gym 5 times a week, spin classes and body pump and my wife gave "us" a series of dancing lessons on Modern Jive which we are about to start next week.Ready for hitting the dance floor on the five week cruise we are to take next February. Retirement years are the best years of your life.I am here to tell you.

These have become a family favourite, I made lemon first couple of batches and now I do orange and the general opinion is that orange are slightly more yum.
The grandkids demolish them.
My daughter told Jackson the 8 year old grandson that they were going to grandmas for afternoon tea and he said "Great ,Grandma has the best junk food ever". A compliment of course.
Thanks for this fantastic easy recipe. My wife love me cooking all of these great things.

Have just been reading the blog on chocolate chip cookies, they look good.
We always have a supply of Luigi's cookies.They are consistantly good and super popular with kids and grandkids, especially if I make them into monte carlos with hazelnut/chocolate spread in centre.
 Had a dinner party last week and my wife Leigh hit on the idea to make mini luigi's which I did and she topped each with the hazelnut and chocolate spread with chopped almonds sprinkled on top and there we had a plate of Petit fours to serve with the coffee. They were so popular, so easy and quick to make and they looked good.
When I make these cookies I mix for double the time stated in the recipe, the mixture is usually still not thoroughly mixed, I then put the lot in a round bottom plastic bowl and mix gently by hand..I do this with the shortbread recipe also, it is no effort.
Can't wait to try the chocolate chip cooky recipe. Just an old sweet tooth.

Didn't know about the better version.We had better buy an Indian cookbook, is it worthwhile? The vegeterian book is very good.

Hi ellie j hope your thermomix cooking is going well. I use it every day, we have a regular supply of 5 seeds bread, i sprinkle a lot of seeds on top before it rises and it is super toasted with crunchy seeds and crust.
Made the butter chicken last night, it is so good, discovered the first time I made it it was a bit bland so added larger quantity of herbs and it was great.Have enough for another meal.Wife just going out and she said there are lots of carrots and pumpkin in fridge  so will make soup, getting a bit chilly in evenings now.
Just got in from a bike class at the gym, keeping up activity other than in the kitchen, go to gym 5 times a week.All this healthy food together with plenty of exercise I willl live for another 20 years.(am 78 years old).

My wife added some rich chicken stock she had in the freezer and some soy sauce to the left over half, it was great.

I made this yesterday, it was very bland.I think I could have put more rosemary leaves therein.The half quantity that is left we will add some strong chicken stock we have in freezer.

Ellie: Yes I agree, everybody so helpful and willing to share ideas.
Hope you are enjoying your TM as much as I . It has given me a new interest.
I go to gym four days a week and need to watch diet so have to be strong and not eat too many cookies.
The best is the healthy food we are now eating.I make 2 litres of yoghurt twice a week.
One of our favourite dishes is the "Tomato pasta with Vegetables and Fetta" It is in the vegetarian book page 72.Have a relative coming to dinner this week and I think she is vegetarian so Bob's your uncle.This is so easy to make.

Hey Julio: I made youir bread with 300gm of fruit .It turned out looking and eating really well.
I chopped the fruit and wish I had left it in larger pieces as it seems to be cut into very small bits during the initial process.
I would be inclined to add some walnuts next time and even more than 300 gm fruit.
On the whole though it is great and the loaf looks very profeessional.

Thanks faffa, instructions say don't use butterfly for cake mixes so wouldn't have thought of that. Will give it a go.

Yes I discovered that, the mixing time is not nearly enough. after the initial mix  I scrape down the mix from the sides and gently fold it in with spatula then mix for what ends up to be double the time..End result is super cookies, especially with the hazelnut/chocolate spread in the centre joining two together.Ration ourselves to one each a day though.
Does anybody else find the orange cake too dry? My wife feels that TM cake mixing is not as good as her old method with mixmaster.She thinks that somehow the TM process results in dry cake mixtures..
We enjoy  the five seed bread , especially toasted.
