Chicken Akhni - Fast and Easy Indian cookbook

Chicken Akhni - Oven cooked Chicken and Rice. From the fast and Easy Indian cookbook, page 106.  "This is a mild and very tasty chicken and rice dish also referred to as a pilau or pilaff"

This dish was brilliant. Even my 5 year old loved it. It was full of flavour. I used chicken lovely legs and doubled the quantity of meat - so used 1kg. I didn't have cumin seeds so used ground cumin.

It seemed like it was going to have too much liquid, so I strained off 2 mc of liquid and used that to cook some potatoes with beans. The rice was cooked perfectly, and the potatoes were delicious!

This makes a big dish. I am glad I doubled the meat, or to our tastes there would be way too much rice.

Thanks, I have just checked the recipe and put a sticker on it saying 'to make'.
May all dairy items in your fridge be of questionable vintage.
