Cookie, when you have time, could you past calories per slice.
Got up early and made Lemon Butter and cup cakes for GD to take back to Melbourne.

Here it is Chookie. This time I made it in a square cake tin and made it 25 slices, so this one will be a little better for me.

I made RTE Chilli Maconi Cheese today, that will be tomorrow night’s dinner and leftovers for Monday.

Today I made a diabetic Tomato Sauce. It is really nice. No sugar and no onion. Wil post.

Yesterday made 11 packets of Quince Paste using Thermomixer recipe.   9 jars of Quince jelly and 1/2 way through Quince and Apricot paste. I’m quinced out.
Marina, would you like some ?I can bring it to Melbourne when we come next week.

Made DS a fruit cake at the weekend and some little apple turnovers for GD.

My cooking so far this week. Firstly I made some veggie & salmon patties, couldn’t eat them as they were too dry so I added some chicken stock to the whole batch, more veggies and cream which turned it into salmon chowder.  Edible but I wasn’t that keen on it.  Next I made half quantity of this creamy spinach & potato bake https://www.bestrecipes.com.au/recipes/creamy-spinach-potato-bake-recipe/04mmxfkw which was really tasty. Today I made a B & B Pudding, adding a snack box of sultanas & a grated golden delicious apple, very happy with that too.  Out of this lot I can add the last 2 recipes to my soft food file.

It is a shame we won't see you next week, Chookie, but much,much better that you both stay safe and well at home.

Made RTE's leek and potato soup yesterday - that's on the menu for tonight.  Also made a vege stew with vege box items - kohl rabi, fennel, kale, gai lan, etc.  An extremely unusual mixture of veges but it turned out OK.

I’m finding I need small amounts of very tasty food.  Not sure if it is the diabetes meds or the diabetes.  I have started making 1/2 amounts of recipes. Today, Spicy Pumpkin soup. Yesterday I had curried crab on toast for breakfast. Strange but good.  I think perhaps I’m not the only diabetic with such yearnings as my Diabetic postings on my Blog have been very busy.
