Happy birthday to all the birthday people and their DH’s. My DH has his in a couple of weeks. I made some cheese biscuits from Tenina’s recipes today.

The weather was so miserable I decided I needed to cook. I found a bread on Cookidoo that I liked the sound of. It has bread flour and whole meal as well as rye. You blitz linseed up to a powder and add pepitas and sunflower seeds. They are broken up as you knead the bread.
DH decided he wanted to make 4 mini rolls in the sausage maker.

I also decided, late in the day, that it was crumpet weather. I used thermomixer’s recipe from the forum. The first 4 we’re ok and had no idea ce holes but the others didn’t have many holes. I may have cooked them too quickly.  They tasted delicious anyway. We had some for afternoon tea. (As you do it rainy, cold weather)

Nice looking crumpets Cookie.   I make them every week, but always SD ones. I find that the longer the mix stands, less holes.
Used the SD Hot X Bun recipe and made a fruit loaf.  Very fruity and tasty.

I saw a recipe on Cookidoo that blitzed 8 dates, pistachios and cranberries together. I tried it and yummy. It s ‘setting’ in the fridge at the moment.

Cottage pie on the stove and braised steak & onions in the SC.  I'll use any leftovers to make pies.

Made a chicken and pearl barley stew (only used 1 thigh not 8 as per recipe). 6 meals for me there. Also made a batch of passata with a bag of very ripe tomatoes I bought yesterday and another B & B pudding.

They look lovely Judy.
We needed some biscuits, so I made Chookie's Best Choc Chip recipe. However I left out the choc chips and put dried fruit and nuts. Our extremely spoiled budgie has some biscuit or cake with DH of an evening and he cant have chocolate. (the budgie)

This is the Cranberry/Pistachio slice.
Blitz 70g pistachios up a little, you want to leave large bits.
Put 130g pistachios into bowl, with about 150g Medjool dates, seeded and cut in half and 140g cranberries.
Blitz until it all comes together. Put into the bowl the 70g of pistachios and just mix in.
Press into a square tin about 16cm or so.
Squish down hard and let set in the fridge.
Cut into squares, and keep in fridge. Each square is about 70 calories.

Thanks cookie. It’s very nice of you to think of your budgie and equally as nice of DH that he doesn’t mind missing out on the chocolate in the cookie.  The slice looks good too.
