Well Cookie1 and Riv Mum, I have done it.  However, a slight tweaking took place at the end because I like a sauce with my chinese vegies.  I dissolved 2 teaspoons cornflour in a little water, added that to 1/2 cup boiling water and l chicken stock cube. Poured that through the lid and cooked a further minute at 100o on reverse and soft speed.  I had cooked the vegies prior to that for 9 minutes and the texture was just perfect for me. I loved it, best recipe I've done! Added 1/2 packet of singapore noodles and put it in the thermo dish to keep warm whilst I steamed the dim sims to go with it.  Poured a little ketjap manis over the dim sims - as nice as everyone has been saying. Have frozen the left-over dim sims for now - have a plan for them though so will get back with that idea when I do it.

I have spent all morning in the kitchen preparing lunch but it was worth it.  Firstly made the buttermilk bread then the steamed dim sims courtesy of the 2 Karens in Canberra together with chinese-style stir fry vegies.  All in all a lovely meal.  Refer tweaking recipes for more comments.

Cathy, that's my sort of breakfast too.  Plus I love tomatoes on toast.  Karen, surely wholegrain cereal is good for you - that's what they tell us anyway.

Yes, I agree, for a nice dessert perhaps.  My daughter saw a packet of Careme puff pastry in her fruit and veg shop today priced at $18 - heck I thought what I paid in the market was expensive enough (almost $10) but that was a bargain (???) compared with what she saw.  Remember this is for 1 sheet of pastry - 350g!!!

Karen, perhaps you could scan that recipe for Bron to give her another option. I don't know how to do it and would have to type out this whole recipe too - didn't think to look in that book for another of her bread recipes.  Perhaps Bron can let us know if she would like the gluten free version first though.

This is the only one in her book 'Healthy Eating with Cyndi O'Meara' for the thermomix.

100g whole grain wheat, spelt or rye
400g organic unbleached strong flour or bakers flour
300 filtered water
1 sachet dried yeast
1 tsp salt
20g oil
1/2 cup fresh herbs (coriander, basil, parsley, dill, chives or a mixture)
Sesame or sunflower seeds (optional)

Place herbs into TM bowl and mince for 4-5 seconds on speed 6.
Remove and set aside.

Place grains into TM bowl and mill for 1 minute on speed 9.

Add water first then yeast, salt, oil, flour and herbs into TM bowl and mix for 6 seconds on speed 6 to combine.

Set dial to closed lid position
Knead for 2 minutes on interval speed

Place the dough into a floured bread tin or onto a floured tray and mould into desired shape.  Sprinkle with sesame or sunflower seeds (opt).

Allow to rise in a warm position or place in a pre-heated oven on 50oC for 15 minutes.

Once dough has risen, bake in a hot oven on 200oC for 20-25 minutes.

Tip - 200g of bakers flour can be replaced with freshly milled grain (wheat, spelt or tye).  Allow longer time for proving as the dough is heavier.

PS  I haven't made this. Let us know how you get on with it - I've had no luck with any bread so far.

What took you so long to get sick of porridge or polenta????? If I make up a batch of porridge (another thing DH doesn't like) it lasts me 3 mornings and then I can't look at it again for months. I'm not a great cereal lover at the best of times and only eat it because 'it is good for you'.  As a kid, I was spoilt by my Mum who gave me a cooked breakfast everyday - eggs several different ways, mock fish (the best breakfast albeit not the healthiest) so I still like to spoil myself at least once a week and have something I really like.

Bought a bag of cheap tomatoes at the market today so that I could make a batch of this pizza sauce - I doubled the quantity, cooked it 10 minutes longer then blitzed it.  Will freeze the lot in little bags until I want them. Great idea.

Well Cookie1, I went to town today and bought the Careme puff pastry for the bolognaise pinwheel. Holy Moses!! almost $10 for 1 sheet and although I think it would be nice for a dessert, can't say it was worth the extra expense for this recipe.  I made the second pinwheel from pampas pastry and there was no great difference in the finished product at all. I'd made the filling yesterday so just had to assemble it for dinner tonight (lunch tomorrow, dinner tomorrow night etc etc!) - it makes a lot for 2 people. Think I'll freeze one.

The trip was worthwhile though as I managed to pick up several items which I have been unable to find in my area for recipes I want to try

Karonjulie, I forgot to say I blitzed the apricots after the 15 minutes cooking - 4 seconds on speed 6 and I scraped down the bowl halfway through the creaming stage.

Made your apricot slice today Karonjulie, your first version which I tweaked a little then when I came on to tell you what I did tonight, you had already tweaked it yourself to pretty well what I did although I only added 3 teaspoons sugar, not 1/2 cup. It was really nice and I reheated a slice in the weber after I'd taken the roast out and I think it was even better reheated.  I have frozen 6 pieces for lunch visitors in a couple of weeks time.  Good on you for your posting.

I have googled 'how to make tomato paste' and can't see that anyone would go to all that trouble and time to make so little of it.  I may be wrong but do what I did and see what you think.  If anyone submits a recipe for our thermomix though, I will give it a go myself.

Make sure you roll these as thinly as possible, the outside ones were nice and crunchy but some of the inside ones were a little too thick and weren't as nice.  Makes 4 traysful so prepare them all before cooking them as they need to stay in the oven until cold which is a little hard to do if you are doing it in 2 batches.  I cooked mine for 12 minutes at least, maybe more.
