Thanks cookie. Itís one way I get to have extra fibre by using wholemeal bread.

My cooking so far this week. Firstly I made some veggie & salmon patties, couldnít eat them as they were too dry so I added some chicken stock to the whole batch, more veggies and cream which turned it into salmon chowder.  Edible but I wasnít that keen on it.  Next I made half quantity of this creamy spinach & potato bake https://www.bestrecipes.com.au/recipes/creamy-spinach-potato-bake-recipe/04mmxfkw which was really tasty. Today I made a B & B Pudding, adding a snack box of sultanas & a grated golden delicious apple, very happy with that too.  Out of this lot I can add the last 2 recipes to my soft food file.

A nice tradition cookie, Iím a baked beans lover too.
Bought a pack of ricotta/pumpkin ravioli at Costco yesterday, turned some bťchamel sauce into a broccoli sauce and served it with a potato & spinach bake, the latter was the tastiest part of the meal. Followed it up with a serve of bread and butter pudding.

Looks like another lockdown coming for Melbourne, once again it messes up everyoneís plans but we know these breakouts are going to happen from time to time and have come to accept it.  Melbourne SIL was coming over this weekend and DD and her family were going over from here in a weekís time so I daresay that will be cancelled too.

This Prawn & Saffron Risotto is from Cooking for me and You which contains recipes for 2.  You can even make them for 1 person which I should have done because 2 serves turned out to be enough for 4 meals for me.  Easy to make and all ingredients on hand.  I canít post a review under the book due to my taste buds not being right yet but it looks great, the prawns were lovely but the rice wasnít that easy for me to eat although I do OK with home made rice pudding. I did add more liquid than the recipe specified and cooked the rice for 3 minutes longer than was stated.

I took it down to DDs cookie, it was a huge casserole dish and enough to feed the 4 of them.  I still have plenty of soup in the freezer and now want to try a risotto next.

I saw that one last night when I was looking at her noodle recipes Chookie, cucumbers are not everyoneís cup of tea but I love them.
I made one of my old favourites for dinner last night but true to form these days, what used to taste great to me doesnít now.  The texture was perfect but the tuna felt so dry in my mouth.  Iíll give it a second try for lunch today but it wouldnít be worth freezing the huge amount leftover to take up room in my freezer if Iím not going to eat it. https://www.forumthermomix.com/index.php?topic=1618.msg13907#msg13907
