I like the idea of shallow frying. Would you believe I am scared of deep frying?
Long ago I had an oil pan fire, very very scary.Thank goodness my DH was there, as I froze on the spot.He smothered the flames with a wet towel, I was left with a very messy kitchen to clean and ceiling to paint.

I made this for supper the evening and I have to say it's one of the best vegetarian meals I have ever made.I served it over pasta.A big thank you Jo for a really wonderful recipe.
