This is DHs favourite soup, he begs me to make it, have to admit it is very good. A nice winter soup! Although you guys are all in height of summer :o :o :o
Diet Cream of Tomato soup:

Ingredients:
8 fresh very big juicy tomatoes (only remove stem part at top)
handful parsley
1 big onion
cup of water
teaspoon salt
1/4 teaspoon sambal oelek
3 diet cheese slices
20g EVOO
1 teaspoon sugar
Preparation:
Firstly blitz onion and parsley speed 5, 10 seconds, add EVOO and sauté 5 mins, speed 2, Temp Varoma. Add tomatoes, salt, sambal, and sugar chop on speed 4 for a few seconds, add cup of water and cook 20 mins, speed 2, Temp Varoma.
Allow to cool for few mins, and blitz top speed 1 minute, add cheese and blend speed 5 a few seconds. Serve.

Tips/Hints:
This is such a lovely cream of tomato soup, you may like to thin it down some more but we prefer ours quite thick.
I normally make this as a starter with homemade burgers to follow with grilled mushrooms. ;) ;)

Thanks bron - sounds good. Love the 1/4 tsp sambal oelek - for those who want us to put ingredients in weights rather than volumes -wonder how you'd go?? ;) ;)
I am sure this would go OK cold - maybe leave out the cheese?

Yes the original recipe was for cold tomato soup, with a squeeze of lemon juice and without the cheese, however we have cooler weather than you guys at the mo, so decided to make it warm & wintery ;) ;)

Even though it's a scorcher here today I just felt like soup. I made this without the cheese and it is sooooooo good. Hubby loved it and the kids did as well. I think the addition of the Sambal Oelek is what really makes it. Thanks for the recipe.
