Passionfruit Butter by Nay-nay

I bottled some passionfruit butter/curd today from my stovetop recipe. Worked perfectly - very happy. All your recipes helped with my conversion (also TMXer's AKA Wookie's Lemon butter helped) - THANKS  ;)

This is what I ended up with:
4 eggs (use to strain - no need now)
185g  sugar
peel off off large lemon or 3 tsp zest
80ml lemon juice
125g passionfruit pulp
200g unsalted butter

Sugar and lemon peel in bowl blitz for 10 sec on speed 7
Add all other ingredients. (When adding lemon juice sooo easy to place lid and MC on bowl and squeeze with hand, measuring as you go and lid catching all the seeds.)  ;)
Put on 70oC speed 4 for 12mins

Spoon into clean ,warm jars. and seal while hot. Refrigerate when cool. Keeps in fridge for 2 months (write date on it ;))
makes 2 1/2cups or 600mls

May all dairy items in your fridge be of questionable vintage.

Thanks Nay-Nay. My MIL loves passionfruit butter so I think I will buy some fresh or wonder if the tinned pulp would do.

Passionfruit butter isn't something I've come across before.  What do you use it for? 

Mind you, it would probably be difficult to find enough ripe passionfruit to make this in the UK so I'm not really sure why I'm asking, other than sheer curiosity :D

VHJ - Passionfruit in tins is fine to make it.

 Katya - It is used as a spread - on bread and butter for some - in cakes/sponges - in pastry cases.  Use like lemon butter/spread

Probably known as curd over there - You can make lemon, passionfruit,strawberry,mango and lime, vanilla bean, apricot.... ;)

We love it just on toast but also on scones,croissants,pikelets,fillings for sponge,crepes,tarts and meringues! :)

Thanks Nay Nay . . . this is delicious!  I made it especially for my son who loves passionfruit yogurt and he is using it to flavour my homemade yogurt, or that's the story anyway. Now, if only I could stop "tasting" it myself!

I used to make passionfruit butter out of a WW recipe book but haven't made it for a while.  It was really lovely and have been wondering about making it again for a while now it as I am in "Lemon butter" mode at the moment, so I'm thinking I might just have a go at this version - passionfruit has such a wonderful taste - takes me back to my childhood when we had a big vine out in the back garden which produced so many fruit we just couldn't eat them all.

I am about to make this with a heap of passionfruits I got cheap from the markets yesterday!
Curd and butter are different, I have made both and curd uses a lot less butter and sugar from memory.

Coops - could you let us know your curd recipe, please.  I've got to admit, I had thought that curd and butter were the same thing.  The curd alternative would be great.  Thanks.

Would be interested in learning more about passionfruit "curd" too  Coops, as less butter would probably mean I could eat more!!  If I had heaps of passionfruit, I might even try using  a bit more than 125ml  (they were 1.20 each here) and maybe less lemon to give a more passionfruit taste.  Just a thought.
