Potato and Leek ???:
[b Msake it for the number you like:[/b]
Ingredients:
Leek/s
Potato
breadcrumbs
cheddar cheese
cheese sauce EDC
boiled eggs if you wish


Preparation:
Prepare the leeks and slice them thinly. Place in the bowl with a little EVOO. Cook at 1000 until soft. Set aside.
Place potato cubes into basket (as many as you like for your family) and add 500ml water to bowl. Cook at 1000 for 25-30 minutes.
Pour water out of bowl, add butterfly and tip the cooked potato in. Add a good dollop of butter.
Speed 4 until potato is smooth.
Put the leek into bowl and combine with potato. speed 4 :-:   for a few seconds.
Place leek and potato mix into a casserole dish.If using boiled eggs, slice and spread potato mix. Pour cheese sauce over and sprinkle with breadcrumbs and grated cheese.
Bakje in a moderate oven for 25-30 minutes.

Tips/Hints:
We saw this on the Hairy Bikers the other night, thought it looked nice and gave it a try. It was lovely.

We rarely watch it Judy but there is so much rubbish on tv at the moment that DH has resorted to watching them. DD and I read or play on our ipads. We don't have foxtel.

We had it with a casserole, sort of as as a vegetable as I didn't put the eggs in it. I think if you put the eggs in it could be a meal as you would be getting protein.

Sounds interesting Cookie, will have to give it a try.  We love leeks not to mention the good old staple potatoes.
