Title: Rum and Raisin Ice Cream

Need
Soak 150g of large Raisins in 60 mls of Rum,  at least over night,  or as long as is convenient.
250 mils milk
500 mils cream
3/4 cup of raw caster sugar.
1 teaspoon of Vanilla essence
  
DO

Place in TMX bowl and mix on speed 4/ 1 minute,        milk, cream , sugar and vanilla .
Tip into Ice Cream machine and churn until nearly frozen.
Add Rum and raisin mixture and continue churning for 10 mins.

maddy - White rum works but I found its pretty mild in flavour (white is all I had)....I think dark rum would give a better depth of flavour. Loved this ice cream Chookie  and it doesn't get easier than this one to make!
It also fit perfectly in the tovolo ice cream tub.  Cool. Definitely will make again, and use dark rum next time.
I added a couple of squirts of Americolor "chocolate brown" gel colouring, whilst ice cream was churning.
This will not set hard because of the Rum. I left my raisins soaking for 2 days and next time I will add more raisins & rum.

Cookie1 - Ooh I do love this ice-cream. I eventually made it yesterday after several days of soaking. I licked bowls, beaters, spatulas and everything I could.

Hum, I've drank my Rum.  I have some White Chocolate Port from the Chocolate Factory Shop in Echuca, that might be nice.

My husband is going to love you chookie it's his favorite ice cream after chocolate lol. DH bought a bottle of rum from Christmas so we are set.

Just knocked up a batch of rum and raisin this morning (using a different recipe). Bit too much rum so had to do a taste test  ;)  made some cherry bourbon icecream as well. Planning a bombe alaska for Xmas dessert (well that's my excuse).....

Can I make this without an icm? Freeze then blitz in tmx then freeze like EDC recipe??

Kimmyh,  i would give it a go.  Make the base first,freeze,  blitz then mix in the Rum and raisins.  Freeze again.

I think I've only got white rum Chookie, is that OK to use?  I bought raisins the other day to do CC's bonbons but ran out of time so I have plenty of those.  Gosh they are expensive - $10 for a 1 kg box (the smallest I could find).

Judy,  all fine,  the raisins will keep,  even if they go sugary you can still use them.

Loved this ice cream Chookie  :-* and it doesn't get easier than this one to make!

Maddy,  glad you like it.  I do use dark rum and am fairly heavy handed.  Thought you must have added something as the color was different.  Love the container.

Jen,  you might like to melt the chocolate and pour it in just before you finish churning.

I made a David Lebowitz (sorry for the wrong spelling), rum and raisin recipe today so will post once we have tried it tonight. I started out making this one but then thought I would try one of his after buying the book. I think I may have overdone the rum and rum essence a little.

Wonder, love his book.  The idea of pouring the melted chocolate into the churning ice cream came from him.

My book hasn't arrived yet Chookie but i found the rum and raisin recipe online. It was lovely and rich but I did overdo the raisins a little. I'm not much of an ice cream eater so one scoop is plenty for me at a time.

No heat arcadia, as far as I can make out you are just mixing those ingredients together. I googled other recipes to double check this.
