GF Fruit bread (from German GF brochure)

Sounds great for a GF Christmas

Ingredients:
130g brown rice
60g buckwheat
250g dried fruit, mixed (e.g prunes, apples, apricots, pears without stones)
250g dried figs
600g water
60g maize flour
50g candied orange or lemon peel
100g nuts, mixed
100g raisins
½ tsp guar gum
½ package of dried yeast
½ tsp sugar
½ tbsp Christmas spices
½ tsp cinnamon
½ tsp grated lemon peel
1 tbsp oil

1)   Mill rice and buckwheat 1m/speed 10 and set aside.
2)   Add dried fruit, figs and water to bowl and cook 10m/100C/soft stir.
3)   Pour the contents of the bowl through the TMX basket and collect the juice in a bowl.
4)   Add rice, buckwheat and maize flour with fruit from basket, 200g of the juice and the other ingredients to the bowl and mix 3m/dough speed.
5)   Form 6 small loaves from the dough, place on a baking tray covered in baking paper and allow to rise 1 hour in a warm place and then bake in a pre-heated oven.

Oven temperature: 180C
Baking time: 60 minutes

Note:
If you wrap the cooled loaves in aluminium foil, they will stay fresh for some weeks.

You could use this mix for hot cross (Easter) buns - yummo

Is guar gum a common health food store ingredient???  Can it be substituted with anything else?

yes it's available in health food shops and health food sections of supermarkets. could try subbing with xanthan gum but i don't know if they do exactly the same thing or not?
