Honey Jumbles

ingredients

   90g butter
   200g honey
   330g plain flour
   1 teaspoon bicarbonate of soda
   1 1/2 teaspoons ground ginger
   1 1/2 teaspoons mixed spice
   1 teaspoon ground cinnamon
   2 tablespoons milk
    
icing

    1 egg white
    1 1/2 cups icing sugar, sifted (I used raw sugar and blitzed it. ;))
    vanilla extract
    strawberry paste/red food colouring/berries

Method

    Place butter and honey in TMX bowl. 100 deg, speed 3, 5 minutes.  Allow to cool for about 15 minutes.
    Sift flour, bicarbonate of soda and spices and add to butter mixture, gently stir in milk on speed 1 for 5 -10 secs.
    Allow to cool at room temperature for about an hour.
    Preheat oven to 180°C.  Line baking trays with baking paper.
    Turn dough onto a lightly floured surface and knead, adding a little flour if needed.
    Divide mixture into four portions and roll each into a long sausage shape and cut each sausage into six pieces.
    Tuck cut edges under slightly.
    Place biscuits onto trays. Bake for about 8 to 12 minutes or until biscuits begin to crack on surface.

 For Icing :

    Whisk egg white in TMX on speed 8 for 1 min. Add icing sugar, and mix on speed 2 until smooth.
    Add strawberry paste,  red food colour or berries (move from speed 1 to speed 7 for 10 secs) to half the icing.  
    Add vanilla extract to other half.
    Spread pink icing over half the biscuits and white over the other half. Allow to set.

This recipe was a total hit with the kids... and I recommend them myself! ;)

Chelsea - I made these and they are just lovely.  Fluffy little pillows with beautiful icing.  They were a bit of a process but well worth it. Next time I would halve the spice amounts as the flavour was a bit too strong for us.

If you like ginger biscuits I suggest adding a tad more ginger to them too!   ;D

I made these from the recipe you linked on fb (so on stovetop).  Didn't have any ground ginger so omitted it but definitely want it next time!

There will be a next time as I didn't even get to make the icing ... they were all gone!!!

oh yum...just got back from a very long weekend lol and saw these...havent had them in ages and bought a pack for the kids when i was in oz in november...thankyouuuuuuu will be trying these out hopefully sometime this week in between soccer practice, basketball, school and everything else going on at the moment..mmmm so many things to try and no where near enough time to try them :(

havent got around to it yet ceejay but its on my list...thanks for bumping as I had forgotten about them (temporarily  ;D)...not much cooking getting done in this house of late as have preparing walls and painting instead (i so much prefer cooking but it needs to be done!)  :)
