Title: Oatmeal Almond Cookies

Its the subtle cardamon that adds that extra dimension  :D :D :D

Ingredients:

120g flaked almonds (or for a chewy biccy 60g flaked almonds + 120g chopped apricots)
160g plain flour
85g rolled oats
2 tsp ground cardamon, sifted
190g sugar
125g butter, chopped
25g  golden syrup
2 tablespoons boiling water
1 tsp bicarbonate of soda

 

Method:

1. Preheat moderate oven (180 - 200oC)

2. If using apricots, chop - 3 secs, Speed 6

3. Add dry ingredients to TM (not bicarb) - 5 secs, Speed 3, Reverse. Set aside.

4. Add butter to TM and golden syrup - 1.20 mins, 80o, Speed 3 (until butter is just melted)

5. In a cup, add the boiling water and then the bicarb and stir to combine and then add to the butter mixture in the TM - 5 secs, Speed 2

6. Add dry mixture to wet mixture in the TM and combine - 30 seconds, closed lid, Intermittent  ::

7. Put tablespoonfuls of mixture onto prepared trays, spaced 5cm apart. Bake in oven for 15-20 mins or until golden. (mine took 15 mins, and watch that they do not overcook as they won't be as nice).

8. Allow to rest on tray 5 mins, and put on wire rack to cool before serving.

They look great! It's such a shame that the kids can't take them to school. It makes me hesitant to make stuff they can't take to school as I am always worried they will take them accidentally (ie. when DH makes lunch or when they make their own). Maybe I can make them on the next school holidays.

These look great. I was wondering what biscuit I'd make and have made some of Frozzie's not scotch shortbread ones. These will be next. They even have healthy things in them.

I used slivered almonds actually cos that was all I had, but next time I will get the flaked almonds cos they look better.

I was wondering seeing as schools ban children from bringing nuts to school, because of nut allergies. What happens when children grow up, will banning nuts in the work place be commonplace as well? How do people with nut allergies go when they go to the shops, or near cafes?

Have just made another batch of these and put in the weight measurement for the flaked almonds, and also made a couple of amendments in step 3 & 6.

I have two containers clearly labelled '"SCHOOL BISCUITS" and "HOME BISCUITS". They also know that they aren't to touch the school container until the end of the week except for packing lunches  ;)

DH and I had a discussion about how best go about it as I don't mind the kids having a biscuit after school and especially like it when there are nuts etc in them for some added nutritional benefit. This is how we get around it. Same as for bread. I always add LSA to my bread to make a separate loaf, slice when cold and freeze - hopefully this might help some of you  ;)

I think that is a great idea of having two separate containers. I think I will have to give that a go - assuming DH promises not to raid them both!

Thanks for the recipe CreamPuff63.  I'm going through a "cardamom phase'  so I'm looking forward to cook these  :)

I've made them both with the variation of all flaked almonds, and the half almonds/half apricots, and my personal preference is for the apricot mix. Just don't overmix the final folding in of all the ingredients because the flaked almonds are very delicate and too much zhooshing will break them into fine pieces. They are a bit like an Anzac biccy with added flavour.
