Recipe Requests / I'm looking for a multigrain bread recipe...

I made the Five Seed loaf from the EDC and it was quite bland as well as quite 'porous' (if that makes sense) so it broke apart when cutting. I am looking for something a bit more soft and fluffy and dense which slices well so I can freeze it for sandwhiches. For those of you who live in Australia my favourite bread is Baker's Delight Countrygrain.

I've just made this and it is really runny  ??? I ended up adding some cornflour towards the end but it didn't do much. Am going to refrigerate and hope this helps solidify it and cook some more tomorrow. Was hoping to use it at a BBQ tomorrow afternoon.

I did a test run as I wanted to make it into a lemon and coconut cake and it was BEAUTIFUL and will ice perfectly - that is, if the butter icing defrosts ok! I played around with the quantities a bit which unusually for me worked  ;D

Will def. be making this cake again.

Cakes / Re: Moist coconut cake

I'm thinking to make this for a BBQ this weekend - I've got some frozen butter icing left over from my daughter's birthday so would like to use this instead of the coconut icing. It's my daughter's first birthday so am wanting something simple to stick a candle on.

I don't have time to stuff up  :-[ which I often do - any thing to consider? Is the cake too moist/crumbly to ice with butter icing?

Here's a solution. Use dry uncooked chickpeas not canned. Increase the quantity of rice from 20 grams to 50 grams. Don't agitate the balls in the frypan until the submerged part is golden brown.



I wish I'd read this before I made these today but am thrilled to read Dani has made the above suggestion.
Clarification - use dry, uncooked chick peas...as in don't cook them?? I'm new to my TMX so still learning how powerful it is!

Thanks all I'm looking forward to being a part of the group. And no Mary Brown, no offence at all. I had an old cat called Zelda. I love the name a lot!! Glad to hear you have some good memories associated with the name though.

Hi Jo, I saw this on your website and am making it for dinner tomorrow night. Can you substitute the coconut butter recipe instead of the coconut cream? I was also wondering whether that coconut butter recipe can be used as a substitute for coconut oil in biscuits etc :-\

I've had my TMX now for a few weeks and am excited to finally get around to joining. I've just copied CreamPuff63's list of favourite recipes (thanks  :)) and am looking forward to trying others.

Anyone else care to enlighten me with their favourite recipes? I made the chicken croquettes from here today and they were BEAUTIFUL except the breadcrumb mix stuck to the pan and not the croquettes  ??? Will def. be making again
