Name of Recipe: Chocolate Chip Zucchini Cupcakes
Number of People: Makes 30 small cupcakes
Ingredients:
250g zucchini, roughly chopped
1 egg
110g oil
170g raw sugar
1t vanilla extract
210g wholemeal plain flour
2T cocoa
1t cinnamon
2t baking powder
sprinkle of salt
250g choc bits
Preparation:
1. Preheat oven to 180 degrees
2. Blend zucchini well - 5 to 10 secs speed 6
3. Add egg, oil, sugar and vanilla extract. Mix on speed 4 for 10 secs
4. Add remaining ingredients except choc bits, mix on speed 5 for 5 to 10 secs
5. Stir through choc bits and divide among lined cupcake cases
6. Bake for 25 to 30 minutes

lucky - the mix made 48 mini muffins, they are so delicious, the boys are inhaling them. Thanks for sharing.
Denzelmum - Made this for friend's 5th birthday, interestingly the kids prefer to have this cupcakes rather then birthday cake. DD request this for her lunch box next week.
joolsmicra - should the mixture be really runny? Huh?? or is it my gluten free flour mix! Panic over, they were fine.
astarra - Made these this morning in mini muffin size - well results are: DH - "yum", DD(5) - "I like them but don't want any more" (very not a sweet tooth, so could be why), DD(2) - "can I have some more - PLEASE??!" DD(10 mths) "num num num!!" So I think all in all, a sucess!! Thank you.
Soph77 - tried it out on 5 littlies and got a resounding yum. Might even add some memoc seed mix next time too. One for the lunch boxes - yay!
Tam - 10 cupcake size and 36 mini muffins in the oven - kids gave the mixture the thumbs up!!! I reduced the sugar to 110gms and the choc chips to 180gms as it seemed sweet enough for us all. Hopefully they'll all enjoy them as it will be great to have these in the freezer for snacks.
berringamababe - has posted a similar but different recipe to this one. Recipe at the bottom of page 2.

I bought myself a mini muffin pan the other day - how do you reckon this recipe would go for that MeganL. Does anyone know if they would be roughly the same size as a small cupcake or maybe even smaller?

judydawn, I have made this into mini muffins and it works great - I have them in the freezer and pop one into Miss 4's kindy lunch box as a tiny treat after her lunch! They are a lot smaller than small cupcakes, so I made one tray of mini muffin size ones and the rest of the mixture made about 12 small cupcakes (for hubby, lol!)
Kym your DD will never know the vegies are there, my kids love them!

Thank you MeaganL. Do you ice them or leave them plain and how long would you cook the mini muffins for please?

I don't ice them, as they are quite sweet with the choc bits in, but you could ice them if you wanted.
I can't remember exactly how long I cooked the mini muffins for, I would start with 15 minutes and just watch them carefully.

oh have to give these a go as my kids are refusing to eat any veg at all..lots of tears lol..so as they love sweet things as least they will have some goodness and not just sugar

DD picked this silicone mold in K-mart - butterfly, dragonfly and bee shape. Found a bit tricky to get the cupcake out perfectly from butterfly shape as it has fine antenna. Well, kids don't mind it ;)

its a doves farm one (U.K.)...........ive also tried using something called xanthan gum, but it seems to make no difference, and since it sounds 'dodgy', Ive given up using it.I use their rice flour for cookies, as the slightly gritty texture seems to suit them more.

Hi, I'm brand new to this. can I ask if the T in this recipe is Teaspoon or tablespoon?

Welcome cardaddict I would interpret the recipe as:
T= Tablespoon
t= teaspoon.

That's the way I see it too CC, I always use a big T for tablespoon.

I just went to post a zucchini choc chip muffin recipe I used today soooo yummy it is different to this one Ingredients are
2 cups zucchini, grated in TM set aside
mixed in TM
3 eggs
1 1/2 cups raw sugar,
1 cup olive oil
1/3 cup dark cocoa powder
1 1/2 tsp pure vanilla extract
Speed 4 10 seconds then added
3 cups SR flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
10 more seconds speed 4 then added
1 cup semi-sweet chocolate chips reverse till combined.
Very moist and not to sweet

Made these for my fussy little one, she had a few bites but the person who is eating it all is ME ;D they are yummmmm!!! I am sure she will one day be better at eating and she will love these :) Thank you so much for this simple and lovely recipe!
Forgot to mention, I reduced the sugar to 110g, it was still sweet enough for us and also reduced the choc chips by half..
